  • 1 medium head cauliflower, cut into small 1-inch pieces
  • 1 teaspoon sea salt, divided
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded Asiago cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons coarsely chopped fresh parsley
  • 1/4 teaspoon pepper
Directions
  • Step 1 Using a paring knife, trim the cauliflower into small pieces, about 1 inch a piece.
  • Step 2 Place the cauliflower and sea salt in a large saucepan. Add just enough water to cover. Bring to a boil. Cover and cook for about 12-15 minutes or until the cauliflower is very tender. Drain and cool slightly.
  • Step 3 Transfer the cauliflower to a large bowl. Add in the cream cheese, butter, asiago cheese, parsley, and pepper. Mix slowly with a hand mixer.
