Have you ever gone to the grocery store and just couldn’t avoid buying something that wasn’t on your list??? Raise your hand! We’ve all been there! That’s what happened with these strawberries. I just couldn’t pass them up! So then I started to brainstorm what to make with them….stuffed strawberries, strawberry muffins, strawberry shortcake…..and then it came to me……Berry Delicious Belgian Waffles!!! Ding, ding, ding!! We have a winner!! Any excuse to use my waffle maker is a good one in my book. And paired with some blueberries they made quite the festive Memorial Day breakfast for me and my hubby.
Plus waffles remind me of one of my favorite vacations that we took back in 2015 to Big Sur, CA. We stayed at Treebones Resort in the Human Nest. IF YOU EVER GET THE CHANCE TO DO THIS, YOU MUST!!! The Human Nest is exactly what you are picturing right now….a giant nest for humans to sleep in. Such an amazing experience, breathtaking views, and an unforgettable breakfast. That’s right…you guessed it! Waffles!!! Except these waffles came with the most stunning view overlooking the Pacific Ocean. AND did I mention they were complimentary?!? Even better right!!

Look at that view!! I find myself constantly wishing I was there! But my view isn’t so bad here either….Look at those sweet faces!!! And they love strawberries too!
Here’s all that you’ll need: Strawberries, blueberries, flour, sugar, baking powder, eggs, milk, butter, and vanilla.
In a small bowl, combine the flour, sugar, and baking powder.
Separate eggs. Place the egg yolks in a bowl. Save the egg whites! We’ll be using those as well!
Lightly beat the egg yolks with a whisk.
Add the milk, butter, and vanilla to the bowl with the egg yolks and mix well with whisk.
Stir in the dry ingredients until just combined. Don’t worry if it still looks a little lumpy. Totally fine!
Here’s where we’ll use those egg whites from earlier. Place the egg whites in a bowl and beat with a hand mixer until stiff peaks form. I started on a medium speed. Continue to increase the speed every 10-15 seconds until you’re all the way up to the max! At about 2 minutes my stiff white peaks began to form.
See! Look how foamy! This is where the waffles get that extra fluffiness from!
Using a spoon or a spatula, gently fold the egg whites into your batter.
Keep folding until they’re all mixed in! I like to make sure to scrape the bottom of the bowl and really get them mixed in there good.
Plug in your waffle iron. I love this one Cuisinart WAF-F20 Double Belgian Waffle Maker, Stainless Steel. Spray lightly with cooking spray before it starts to heat up. You’ll only have to do this step one time. Once the iron is hot you will not have to continue to spray between waffles.
Let’s get those toppings ready! Now is a good time to slice up some of those strawberries while the waffle iron is heating up! Don’t they look delicious! I could eat them without the waffles.
When your waffle iron is ready, scoop in a small amount of batter. This part will take a little bit of trial and error to figure out just exactly how much batter is needed. My waffle iron is by Cuisinart and takes about half a cup of batter per waffle. Quickly spread the batter with a spatula. Don’t worry about getting every crevice! The batter will naturally spread out on its own as well.
Close it up and wait for the beep, or the buzzer, or the light to go on! OMG! Golden delicious goodness!!!
Gently lift the waffle out of the iron and onto your plate……and into your mouth!!
Add the sliced strawberries and blueberries (and maybe a little butter or syrup or whipped cream!!) and Voila! You’re done! If you need me, I’ll be right here daydreaming about Big Sur while stuffing my face with Belgian waffles! Nom nom nom!!
Berry Delicious Belgian Waffles
Ingredients
- 2 cups flour
- 3/4 cup white sugar
- 3-1/2 teaspoons baking powder
- 2 eggs, separated
- 1-1/2 cups milk
- 1 cup butter, melted
- 1 teaspoon vanilla extract
- sliced fresh strawberries
- fresh blueberries
- syrup (optional)
Directions
- Step 1 In a small bowl, combine the flour, sugar, and baking powder.
- Step 2 Separate eggs. Place the egg yolks in a bowl and lightly beat with a whisk.
- Step 3 Add the milk, butter, and vanilla to the egg yolks and mix well with whisk.
- Step 4 Stir in the dry ingredients until just combined.
- Step 5 Beat egg whites until stiff peaks form. Fold into batter.
- Step 6 Bake in a preheated waffle iron according to manufacturer’s directions until golden brown.
- Step 7 Serve with fresh berries and syrup if desired
