Crescent Roll Breakfast Casserole is my go to recipe when I need breakfast on the table in a jiffy! This delicious egg and sausage bake will make the whole crowd happy. And it’s so easy to pull off that it’ll make you happy too. The ingredients are simple: refrigerated crescent rolls for a flaky crust, savory breakfast sausage that’ll fill you up, and  a delicious egg and cheese bake to hold everything together. There’s very little work involved and you can have this ready in about 30 minutes from start to finish. Leftovers refrigerate well and are great the next day. But don’t be surprised if the pan empties fast and there’s not a single slice left!

Let’s get the hard part out of the way first! Just kidding there really is no hard part to this recipe. Place the sausage in a skillet over medium heat on the stovetop. Cook the sausage until it’s no longer pink, breaking it up into crumbles as it browns. Drain the sausage and set aside. We used a standard breakfast sausage, but maple or Italian can be a fun change too. Not a sausage fan? Try using bacon crumbles or cubed ham in its place. Cooked peppers, onions or even mushrooms can also be easily added alongside any of the meats.

Next spray a 13″X9″ baking dish with cooking spray. Roll out the crescent dough to cover the pan completely. Pinch the seams together to seal so the dough forms one solid sheet. You may need to stretch or scrunch it a little to fit perfectly in the pan. Don’t worry! This dough is super forgiving. Spread the sausage evenly over the crescent dough. A pound of meat should cover the dough completely. Sprinkle the cheese over the sausage to cover. Sharp cheddar is my favorite! The sharper the better!! Mozzarella makes a great substitute or even a mix of the two. Add the eggs, milk, rosemary, salt and pepper to a medium bowl. Whisk until everything is completely combined. Pour the egg mixture over top of the casserole. The fresh rosemary will have the kitchen smelling amazing. Oregano, thyme or even Italian seasoning can be fun variations too.

Bake Crescent Roll Breakfast Casserole in a 400 degree preheated for 15-20 minutes or until the crust is golden and the eggs are set. And that’s it! Breakfast is served. I’m telling you it doesn’t get any easier than this. Directions

  • Step 5 Bake in a 400 degree preheated for 15-20 minutes or until the crust is golden and the eggs are set. Cut into slices to serve. Enjoy!
