Everything Braided Bread

The name says it all folks! Everything Braided Bread is…..you guessed it….EVERYTHING!!! Talk about homemade bread goals. If you’ve ever wanted to try your hand at bread making, this recipe is the place to start. This impressive loaf is crusty on the outside, soft on the inside and packs a wallop of flavor just like the popular bagel. It makes for great toast and holds up well in soup. What more could you ask for in a bread? And then there’s that braid. So fancy yet simple to pull off all at the same time. The recipe makes a BIG loaf so make room in the bread basket.

Here’s all you’ll need: yeast, water, milk, butter, sugar, an egg, salt, flour, kosher salt, mixed onion, caraway seeds, sesame seeds and poppy seeds (or Trader Joe’s Everything but the Bagel seasoning).

Grab a large bowl and dissolve the yeast in warm water. It’s always a good idea to proof your yeast to make sure it’s still active. Sprinkle the yeast across the top of the surface of the warm water and wait 5-10 minutes until the yeast is nice and bubbly. If your yeast isn’t bubbling after 10 minutes, it may be old. Now don’t you worry, you can still use old yeast in recipes, but it will take longer to rise. Be sure to store yeast in a cool, dry place and be mindful of expiration dates.

Add in the milk, butter, sugar, egg yolk, 1-1/2 teaspoons of salt and 2 cups flour. Blend with a hand mixer on medium speed for 3 minutes. Stir in the remaining 2-1/2 cups of flour by hand to form a firm dough.

Knead the dough on a lightly floured surface until smooth and elastic (about 6-8 minutes). Press down and outwards with the heels of your hands until the dough is springy. Fold the dough in half, press down with the heels of your hands to press it flat. You’ll know you’re done kneading when the dough is smooth and shiny and holds its shape. Cover with plastic wrap and let the dough rise for about an hour or until the dough has doubled in size. Of course you can use a bread maker to mix the dough if you like. We won’t count it as cheating!

Punch down the dough and divide it into thirds. Shape each portion into a 20 inch long rope. When I’m in a pinch and need to measure something in the kitchen I try to use common kitchen tools as a guide. Line the largest baking sheet that you have with parchment paper. In this case I used my 17.25″ X 11.5″ mentioned above. Parchment paper is like gold to me in the kitchen! It’s a nonstick baking paper that yields fantastic results. If you know, you know. Place the ropes on the baking sheet and braid. What would Everything Braided Bread be without the braid…..still delicious!!! Pinch the ends to seal and then tuck them under the dough. Next we’re going to make an egg wash. Combine the egg white (that we saved from earlier) with 2 teaspoons of water. Whisk lightly. Brush the egg wash over the dough. Sprinkle with 5 teaspoons of Trader Joe’s Everything but the Bagel seasoning or make your own. To make your own Everything seasoning, combine 1 teaspoon of each; kosher salt, minced onion, sesame, caraway, and poppy seeds. This loaf bakes up REALLY big! Like barely fits on my biggest baking sheet big. But can you really ever have enough bread?!? Ingredients
  • 1 package (2-1/2 teaspoons) active dry yeast
  • 3/4 cup warm water
  • 1 cup warm 2% milk
  • 1/4 cup butter, softened
  • 2 tablespoons sugar
  • 1 large egg yolk
  • 1-1/2 teaspoons salt
  • 4-1/2 cups all-purpose flour
  • 1 large egg white
  • 2 teaspoons water
  • 1 teaspoon coarse sea salt or kosher salt
  • 1 teaspoon dried minced onion
  • 1 teaspoon each sesame, caraway and poppy seeds
Directions

  • Step 5 Combine the egg white (that we saved from earlier) with 2 teaspoons of water. Whisk lightly. Brush the egg wash over the dough.
  • Step 6 Sprinkle with 5 teaspoons of Trader Joe’s Everything but the Bagel seasoning or make your own. To make your own Everything seasoning, combine 1 teaspoon of each
  • Step 7 kosher salt, minced onion, sesame, caraway, and poppy seeds.
  • Step 8 Bake in a 375 degree preheated oven for 22-28 minutes or until the bread is golden brown. Remove to a wire rack to cool. Enjoy!
