WARNING!!! This might be the cutest dessert you ever make!! REALLY!!! I was SO excited to make these for Ellie’s Amazing Ice Cream Party because I knew they would be a crowd favorite. But let me tell you, the adorableness of these Ice Cream Cake Pops far exceeded my expectations!! For starters, they taste delicious, and every last detail on them is edible. YUM!!! Oh and they look so lifelike that you might actually feel like you’re biting into an ice cream cone for a second. But unlike ice cream, there’s no brain freeze and they won’t melt! And they really are easy to make. If you can master our Foolproof Cake Pops, you can totally handle these. Well, what are you waiting for??? Let’s take your cake pops skills to next level fabulous!!
Here’s all you’ll need: Cake mix, frosting, sugar cones, candy melts, sucker sticks, sixlets and sprinkles.
Bake cake according to package directions. Crumble into a bowl once it has cooled. Add 2 spoonfuls of frosting and mix it all together with your hands. Add more frosting if needed but typically with cake pops, less is more! You want it to be moldable but not wet and mushy. Check out our Foolproof Cake Pops tutorial for more cake pop tips!
Roll cake mixture into 2 inch balls. Keep Rollin’ rollin’ rollin’, c’mon!
Melt candy melts in a microwave safe container in 30 second intervals. Be sure to stir in between each interval for an even melt. We used pink for “strawberry” and white for the “vanilla”.
Dip the tip of a sucker stick and then plunge it straight into a cake ball. Repeat the process for all of the cake balls. Pop ’em in the freezer for about 20 minutes. We want the cake pops to be firm but not frozen.
Carefully cut the top off of the sugar cones with a gentle sawing motion. Discard the top piece of the cone or recycle it into another treat! We’d love to hear how you used the extra pieces! Your cut doesn’t have to be perfect. We can drip some “ice cream” down the cone to hide any imperfections.
Carefully cut the bottom off of the sugar cones. We need the hole at the bottom to be big enough for the sucker stick to fit through. Your cone should look like this!
Reheat the candy melts in 15 second intervals until remelted. Allow them to cool for a minute or two. We want them to be melted but not hot. Take the cake pops out of the fridge or freezer while you’re remelting. Dip the cake pop into the candy melts and gently swirl, making sure to cover the whole cake ball completely.
Lightly tap the cake pop on the side of the mug, allowing the excess candy coating to drip off.
Dip the rim of the cone in the candy melts.
Drop the cake pop into the cone. The stick should come through the bottom. Press the rim of the cone to the cake pop to secure.
Using a spoon, carefully drip candy melts around the outside of the cone to make the illusion of a scoop of dripping ice cream. Stick the cake pop in a foam block (or cake pop stand) to allow candy melts to harden. You can totally stop there if you like! I totally did for about half of my batch. I think they are simply adorable as is…..OR scroll down to take it to next level cuteness!!
Melt brown candy melts (or color of your choice) in a ziploc bag in the microwave in 30 second intervals or until melted. Cut a small hole in the corner of the bag. Drip candy melts on top of your cake pop to look like hot fudge drips!
I dripped a bunch on top and then smoothed it out with my finger. Add a sixlet “cherry” on top before the candy melts have a chance to harden. You could also add sprinkles if you like. Place in a foam block to allow candy melts to harden.
Single scoop of strawberry anyone??? I still can’t get over how realistic these Ice Cream Cake Pops look!!

Ice Cream Cake Pops
Ingredients
- 1 box cake mix (any flavor)
- 2 Tablespoons canned frosting (any flavor)
- Wilton candy melts
- 24 Sugar cones
- red sixlets (optional)
Directions
- Step 1 Bake cake according to package directions. Cool. Crumble cake into fine crumbs with hands. Add two heaping spoonfuls of frosting and mix well by hand. Shape cake mixture into round 2 inch balls.
- Step 2 Place Wilton candy melts into a microwave safe mug. Melt in 15-30 second intervals. Stir well between each interval.
- Step 3 Dip the tip of the sucker stick into candy melts. Stick candy coated side of stick into cake ball. Place in freezer for 20 minutes.
- Step 4 Remove cake pops from freezer. Re melt the candy melts in 15 second intervals. Allow candy melts to cool slightly.
- Step 5 Dip cake pop into the candy melts. Tap stick against the side of the mug to allow excess candy coating to drip off.
- Step 6 Carefully cut the top and bottom off the cone. Dip the rim of the cone into candy melts. Drop the cake pop into the cone. The stick should come out through the bottom. Press the rim of the cone to the cake pop to secure.
- Step 7 Using a spoon, carefully drip candy melts around the outside of the cone where the cone and the cake ball meet. Place in a cake pop stand and allow candy melts to harden.
- Step 8 Melt brown candy melts (or color of your choice) in a ziploc bag in the microwave in 30 second intervals or until melted. Cut a small hole in the corner of the bag. Squeeze candy melts onto the top of cake pop to look like hot fudge. Top with a red sixlet.
- Step 9 Place in a cake pop stand and allow candy melts to harden completely. Smile with delight and enjoy!!
