If you like sweet potato fries, then you’ll love Grilled Sweet Potatoes! I’ve always been a sweet potato fan whether they’re fried, baked or all dolled up in a holiday casserole, but grilling them puts it on a whole new level for me. Grilling not only highlights their natural sweetness but also leaves behind a charred and smoky flavor that just tastes fantastic. This healthy and delicious recipe is a nice change of pace to your dinner routine and beyond easy to prepare. We’re talking on the table in a matter of minutes! The potatoes get a head start in the microwave and finish on the grill right alongside with your main course. This one’s a keeper for sure! And don’t skip out on the creamy Gorgonzola spread. It pairs wonderfully with this simple grilled veggie.

Here’s all you’ll need: sweet potatoes, Gorgonzola cheese, mayonnaise, lemon juice, olive oil, salt, pepper and chives.

Wash and scrub the potatoes and then pierce with a fork. Leave the skins on, there’s no need to peel. Using the fork make several deep incisions in the potatoes. This will allow the steam to escape and prevent a mess in the microwave. Place on a microwave safe plate and cook for 6-8 minutes (depending on the size of the potatoes). Be sure to turn over the potatoes once about halfway through cooking. Don’t forget that we’ll finish cooking the potatoes on the grill so we don’t need them to be cooked all the way through. We’re just giving them a little help.

Allow the potatoes to cool until easy to handle. Meanwhile let’s whip up that amazing Gorgonzola spread. This spread reminds me of one of the dipping sauces that they bring out for the veggie course at the Melting Pot. It’s SOOO good and pairs well with most vegetables. In a small bowl, combine the Gorgonzola cheese, mayo, and lemon juice. That’s it! So simple. Cover and refrigerate until ready to serve.

I love that a simple sprinkle of salt and pepper is all that’s needed because obviously I always have both on hand which means I can whip up a batch of Grilled Sweet Potatoes even on short notice. Fire up the grill to medium heat. Grill, covered, over medium heat for 4-5 minutes per side, turning once. Lightly brush the potato rounds with olive oil and don’t forget the sprinkle of salt and pepper below turning. We use a grill mat on a regular basis but it’s not necessary for this recipe and potatoes can be grilled directly on the grates. The benefits of a grill mat are easy cleanup and of course none of the veggies will fall or slip through the grill grates. We love trying all the latest gadgets!

  • 1 cup (4 ounces) crumbled Gorgonzola cheese
  • 1/2 cup mayonnaise
  • 1 to 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Minced chives, for garnish
Directions
  • Step 1 Wash and scrub the potatoes and then pierce with a fork. Place on a microwave safe plate and cook for 6-8 minutes (depending on the size of the potatoes). Turn potatoes over once about halfway through cooking. Allow the potatoes to cool until easy to handle.

Let’s get started on that sweet and tasty marinade. In a large bowl, mix together one 12 oz can of root beer, corn starch, ground mustard, and caraway seeds. Whisk until the corn starch is fully combined into the soda pop mixture.

Next brown the brats in batches in a large skillet over medium heat. Keep in mind that you don’t want to cook them all the way through. We’re just searing the outsides to help keep in all of that juicy and delicious flavor! Now just what exactly is bratwurst you might ask? Bratwurst is a specific type of sausage link that originated in Germany. Typically it’s made with pork, beef, or sometimes even veal. If you don’t have bratwurst available you can use a typical run of the mill sausage as a substitute.

Add the Root Beer Brats to a 4-5 quart crockpot. Cover with chopped white or yellow onion, chili sauce and the root beer mixture. Cook covered, on low for 6-8 hours or until a meat thermometer reads at least 160 degrees. My crockpots always seem to cook on the hot side so 6 hours was plenty for me. I would recommend checking about 4 hours in so you can adjust the temperature as needed.

What’s for dinner tonight? Let’s take it nice and easy and whip up a batch of One-Pot Lemon Chicken Orzo! You’re gonna love this recipe for SO many reasons. First off it’s fast and easy to make which means it’s perfect for a busy weeknight dinner. It’s loaded with wholesome ingredients that you can feel good about like whole wheat orzo, spinach, tomatoes, lemon, and basil. They’re also simple and fresh ingredients that you can find just about anywhere right now. And then there’s my favorite part…this recipe is one-pot….meaning everything cooks in the same skillet. Being home more lately means my dishwasher is packed full like every single day. So the fact that this recipe uses only a single skillet is a major bonus in my book!

Here’s all you’ll need: flour, garlic powder, boneless skinless chicken breasts, salt and pepper, olive oil, reduced-sodium chicken broth, whole wheat orzo pasta, fresh spinach, grape tomatoes, lemon juice, fresh basil, lemon wedges (for serving).

First things first let’s prep that chicken! Pound the chicken with a mallet to 1/4-inch thickness. If you don’t have a mallet handy, you can use a heavy rolling pin, the back of a skillet, or even a thick cookbook. Pounding not only tenderizes the meat but it also helps to keep each piece even in size which results in a more even cooking rate. This simple trick can be used in just about any recipe and will makes your chicken breasts taste so much better! I always pound in a ziploc bag to keep the mess to a minimum. Not sure about your mallet skills? Buy chicken cutlets instead which are cut thin in size.

Sprinkle the chicken with salt and pepper on both sides. Next combine the flour and the garlic powder in a small shallow bowl. Cut the chicken into small pieces and dredge in the flour mixture. Dredging simply means to coat an item in flour (or sometimes breadcrumbs) before cooking. Lightly shake off any excess flour.

Heat 2 Tablespoons of olive oil in a large skillet over medium heat. Add the chicken to the hot skillet and cook about 3-4 minutes per side or until the chicken is no longer pink. Remove the chicken from the skillet and set aside. Cover with aluminum foil to keep warm.

Add the chicken broth to the same skillet and bring to a boil. Scrape the bottom and sides of the pan to loosen the brown bits and boost flavor. Stir in the orzo and return to a boil. Once the mixture starts to boil, reduce the heat to a low simmer. Cover the skillet and simmer for 8-10 minutes or until the orzo is tender.

The key to this part is the simmer. The goal here is to cook out the liquid over the course of 8-10 minutes. If the liquid cooks out before then, the heat is too high and you’ll need to add more broth. If after 10 minutes you’re still left with a bunch of liquid, the heat is too low and you’ll need to continue cooking until the broth has absorbed into the orzo mixture.

Stir the spinach, tomatoes, lemon juice, basil and 1/4 teaspoon of salt into the orzo. Return the chicken to the pan and lightly warm if needed. Gently toss to combine.

  • 2 tablespoons minced fresh basil
  • Lemon wedges, optional
Directions
