Steak Sub on a Stick

Ok so if you’ve been reading my blog and getting to know me, then you know by now that I love me some easy, no clean up grilling recipes in the summertime! And yes, we are THAT family that grills in the snow too, but grilling is just so much better when it’s hot out and the sun is shining! (stating the obvious, right?!?) So it should come as no surprise that this is one of my favorite grilling recipes. The flavors are so simple, but compliment each other in the best ways imaginable! Not to mention, this recipe is portable, on a stick, take me anywhere kind of eating. Like play corn hole with one hand and eat a steak sub on a stick with the other. Yep, the fun doesn’t have to stop just cause it’s dinnertime! Well, I got winner….cause I’m going in double fisted on the kebabs!

Here’s all you’ll need: Steak, ciabatta bread, red peppers, onion, steak seasoning, and provolone cheese (not pictured).


Soak wood skewers in water for an hour (or more). This will keep the wood from catching fire and burning up on the grill. Safety first!

Cut ciabatta bread into 1 inch chunks. Instead of grabbing a whole loaf of ciabatta, we used these ciabatta rolls from Sam’s Club. Either will work!

Chop the red peppers into 1 inch chunks. I can’t decide which is my favorite part to these shish kebabs!


And we’re going to do the same with the onion. Nice, hearty, one inch pieces!


And last but not least, don’t forget about that steak! We’re going to slice and dice the meat into bite size pieces. You’ll also want to season it with your favorite steak seasoning. We used McCormick’s Montreal Steak. Yummy!!!


Now we’re going to thread all of these goodies onto our wood skewer! We start with the steak, and then we add the onion, followed by the ciabatta bread and red pepper. All the components to mouth watering steak sub!


Then just keep repeating the pattern until the skewer is full. Steak, onion, ciabatta bread, red pepper, repeat!

Continue until all of the sticks are full! These kebabs are full of color but we are about to make them even better!!


Slice each piece of provolone cheese into 4 strips. You’re going to want to have the cheese ready in advance. The kebabs don’t take very long on the grill!


Place steak skewers on a grill over medium heat. Grill uncovered, for 5-8 minutes or until steak pieces are cooked through. Rotate the skewers to get an even cook.


And now it’s time to lay on the goodness!! Once the steak is cooked through, place two cheese slices on each kebab to cover. Grill for an additional 1-2 minutes or until the cheese is melted.

Remove from the grill and serve warm! How fabulous are these portable steak subs?!?

Melty, cheesy, goodness!! Come to me!! You can push everything off of the kebab and onto your plate or just eat it right off the stick! We are an eat it off the stick kind of family.

Even this guy was willing to sit just for the mere chance to get a bite of the kebabs. Look how cute and well behaved he looks!! He definitely has his moments. Ok, I’ve decided!! Maybe my favorite part of these shish kebabs is the dachshund on the end!! What do you mean they don’t all come that way???

Ingredients
  • 2 red peppers
  • 1 onion
  • 2 ciabatta rolls
  • 1 lb steak
  • steak seasoning of your choice
  • 6 slices provolone cheese
Directions
  • Step 1 Soak wood skewers for one hour. Chop onion, red peppers, steak, and ciabatta bread into one inch chunks.
  • Step 2 Thread steak, onion, ciabatta bread, followed by red pepper onto wood skewers. Repeat pattern until skewer is full.
  • Step 3 Grill uncovered, over medium heat for 5-8 minutes or until steak is cooked through and vegetables are tender.
  • Step 4 Slice each piece of cheese into 4 strips. Place 2 strips of cheese over each shish kebab. Grill for an additional 1-2 minutes or until cheese is melted.
  • Step 5 Remove from heat and enjoy! Serve warm
