Soooo….a few things you’ll absolutely LOVE about this one, it’s on the table in 25 minutes flat, only uses 11 simple ingredients including the pork chops, and you’re only going to dirty one dish in the process. It’s the perfect recipe for those of us with busy lives, which this year, is literally everyone!! This cold weather meal is Fall comfort food at its finest. The pork chops cook up juicy, flavorful complete with a sweet and tangy homemade pan gravy. The only problem I have is trying to keep apple cider in my house long enough to use it in a recipe. We love all things Fall around here!

Here’s all you’ll need: olive oil, boneless pork chops, garlic, Dijon mustard, honey, apple pie spice, pepper, thyme, salt, apple cider, cornstarch, water, and fresh parsley to garnish.

What are you waiting for? Let’s get cracking! Heat 2 Tablespoons of olive oil over medium heat in a large skillet. We use cast iron round here whenever we can because it’s so versatile and fun to cook with. Of course you can use any skillet to make this recipe. Brown the pork chops on both sides (about 2-3 minutes per side). Depending on the size of your skillet, you may need to do this in batches.

While the pork chops are cooking we can mix up the beginnings of our gravy. Yes! It really is that simple that it will only take a minute or two. Add the minced garlic, Dijon mustard, honey, apple pie spice, ground pepper, thyme and salt to a small bowl. Mix with a spoon to combine. Next whisk in the apple cider and we’re on our way to a super easy, bursting with flavor, made from scratch gravy.

Pour the apple cider mixture over the pork chops. Reduce the heat to medium-low and cover with a lid. Remove the pork chops from the skillet and let them stand for about 5 minutes. This allows all of those delicious juices that come to the surface during cooking to return to the center of the meat. Mix the cornstarch and water together in a small bowl. Stir until smooth. Add the cornstarch “slurry” to the pan. Turn the heat up to bring the mixture to a boil. Cook stirring constantly for 1-2 minutes or until thickened. Scrape the edges and bottom of the pan while stirring to loosen any brown bits remaining from the meat. The pork chops are removed from the pan.   • 2 tablespoons olive oil
  • 6 boneless pork loin chops (6 to 8 ounces each), about 3/4 inch thick
  • 1 garlic clove, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon apple pie spice
  • 1/2 teaspoon coarsely ground pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1 cup apple cider
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Minced fresh parsley

  • Step 3 Pour the apple cider mixture over the pork chops. Reduce the heat to medium-low and cover with a lid. Cook the pork chops until a meat thermometer inserted into the thickest part of the chop, reaches 145 degrees (about 4-5 minutes depending on the size of your chops).
