Chicken Wing Dip

Chicken Wing Dip

Alright let’s just cut to the chase here! This next recipe is called Chicken Wing Dip NOT “Buffalo” Chicken Wing Dip. You don’t call them “Buffalo” wings if you actually live in Buffalo. The Buffalo part is just assumed cause everyone knows that when it comes to wings, we do it best! Chicken Wing Dip is a game day staple in these parts and after one little taste you’ll see why. Nothing goes better with football than the amazing flavor of pizza and wings. Now if you wanna do it right you’ve gotta know a few things, first Frank’s RedHot sauce is a must!!! True chicken wing lovers will swear by this fact. And second, for Heaven’s sake do not omit the blue cheese! A true wing dip has blue cheese…it’s a Buffalo thing. And if you really wanna do this deliciously cheesy, oh so delish dip the justice it deserves, serve it with celery and carrots along with your favorite dippers.

Here’s all you’ll need: cream cheese, cooked chicken, Buffalo wing sauce (or hot sauce), blue cheese salad dressing, and colby jack cheese.

Chicken Wing Dip ingredients list

Let’s get started cause I know you can’t wait to dive in to some Chicken Wing Dip. Frank’s RedHot sauce is the way to go. This wing sauce is the real deal or you can keep it old school with the classic Frank’s RedHot hot sauce. Of course you can swap out for your favorite wing sauce or hot sauce but just know that in Buffalo we’re using Frank’s. (and this is definitely not an ad)

A bottle Frank's RedHot wing sauce

Soften the cream cheese Soften cream cheese in a microwave safe bowl for 30 seconds. Next add the wing sauce and blue cheese dressing. Mix well with a hand mixer or by hand. It’s ok if the cream cheese is a little lumpy and not completely smooth. It’ll all melt down in the oven while it bakes. Ok so I can’t believe I’m saying this, but if you absolutely are not into blue cheese, yes you can swap out for Ranch. (But I might get hate mail over that one!)

Cream cheese, blue cheese and hot sauce mixed together in a bowl.

Next chop up or shred the cooked chicken. The absolute quickest and easiest way to do this is to grab one of those pre-cooked rotisserie chickens. Slice a little bit off and BAM! You’re done. Of course you can cook your own chicken breasts or use canned chicken as well.

Rotisserie chicken chopped into bitesize pieces on a cutting board.

Add the cooked chicken and 1 cup of cheese to the bowl and mix it all up. All that creamy, cheesy goodness is going to melt down and hold this thing together.

Cooked chicken and colby jack cheese are added to the bowl.

Place in a 1-quart baking dish and top with the remaining 1 cup of cheese. Bake uncovered in a 350 degree preheated oven for 20-25 minutes or until that top layer of cheese is nice and melty! I placed this guy on a baking sheet just in case it bubbled over.

Chicken Wing Dip placed in a 1-quart shallow baking dish and topped with cheese.

Remove from the oven and serve warm. Tastes just like a chicken wing dipped in blue cheese. Mmmm-mmm good!! Ain’t no thang like a chicken wing!! You know what pairs perfectly with Chicken Wing Dip??? Our Cheesy Pizza Dip, of course!!

Spinach Artichoke Dip

Spinach Artichoke Dip

If Spinach Artichoke Dip is involved then you can count me in people! It’s pretty much one of my main weaknesses. I just can’t say no to this luscious, creamy, absolutely delicious dip. I’ve tried all the recipes, the restaurant knock offs, the crockpot versions, you name it. But this one, my friends, is by far my favorite! One taste and you’ll be hooked too. There’s no mayo involved so it tastes much lighter than most variations, which to me, really sets it apart from the rest. Loaded up with spinach, artichokes, and of course, LOTS of cheese, you won’t believe how quickly this dip becomes your new obsession. You might as well just go ahead and throw away all those other recipes right now. This is seriously THE BEST Spinach Artichoke Dip EVER!!!

Here’s all you’ll need: artichoke hearts, fresh spinach, garlic, onion, sour cream, cream cheese, milk, mozzarella cheese, Parmesan cheese, garlic salt, Italian seasoning, and pepper.

Spinach Artichoke Dip ingredients list.

So not only does Spinach Artichoke Dip taste amazing but it’s also super duper easy to prepare. Chop the onions, spinach and artichokes. A lot of recipes that I’ve tried in the past use frozen spinach. Well after this one, I’m a firm believer that fresh is best! It gives this dish such a nice texture. For the artichokes however, I always opt for the canned version. This time saver is just invaluable to me considering all those minutes I’ll inevitably spend googling how to cut fresh artichokes and watching you tube videos. Combine the onions, garlic, spinach, and artichokes in a medium sized bowl.

Chopped onions on a cutting board next to chopped spinach and artichokes in a bowl.

Oh yeah, did I mention that chopping the vegetables is the hardest part of this recipe? I can feel that sigh of relief. The heavy lifting’s over! Stir in the sour cream and softened cream cheese. You can lighten this recipe up even more by selecting fat free or low fat versions. But in my mind that just gives me permission to pile on that cheesy topping at the end of this recipe! So your call. Choose your battles wisely.

Onions, garlic, spinach, artichokes, cream cheese, and sour cream mixed together in a medium sized bowl.

A few more quick additions and we’re ready for the oven! Mix in the milk, 1 cup of mozzarella cheese, grated Parmesan, garlic salt, Italian seasoning, and pepper. Again with the milk, skim, 2%, whole, I’ll leave that up to you and your waistline. But you really can’t make a bad decision here but for the love of God save the Almond and Coconut milk for another time! Mix up all the ingredients until the Spinach Artichoke Dip is nice and creamy. Mmmm….do you see that?!? Chunks of yumminess in every.single.bite!

Milk, mozzarella cheese, Parmesan, garlic salt, pepper, and Italian seasoning are stirred into the dip.

And now for my favorite part…SAY CHEESE!!!! The cheesy topping on this dip is a total game changer! I don’t know why it never occurred to me to do this myself but it’s literally life changing. You’ll never go back to the plain old naked version again. Place the Spinach Artichoke Dip in a pie plate or shallow baking dish. Then sprinkle that remaining cup of mozzarella over the top. I mean cause who wants to put a measly 1 cup of mozzarella back in the fridge anyways?!? That’s just sad. And now we’re ready for the oven! Bake uncovered, in a 400 degree preheated oven for 30 minutes or until the cheese completely melted.

Spinach Artichoke Dip in a pie pan, topped with mozzarella cheese and ready for the oven.

Serve warm with your favorite dippers. We love tortilla chips, pita triangles, or even toasted baguette! That melty cheese with those crispy golden edges got me drooling a little. Spinach Artichoke Dip is great for sharing….otherwise you’ll be eating the whole pan yourself!!! Which isn’t a bad thing either! And don’t forget to try our Cheesy Pizza Dip too!!

Loaded Totchos ingredients list #totchos #tatertotnachos #cincodemayo #tatertotrecipes #mexicanrecipes

First cook the tater tots according to package directions or until golden brown. I like mine nice and crispy crunchy so I cook them a few minutes longer than the package directions! Who’s with me on that crunch?

Meanwhile in a large skillet brown the ground beef over medium heat until no longer pink. Crumble the meat as it browns. Then drain any excess grease from the pan. I like to use  90% lean beef or higher because the meat doesn’t shrink down as much during cooking. You could also substitute ground turkey or chicken.

Add in the taco seasoning and water. If you buy your taco seasoning by the packet you can toss in the whole thing. Or if you love Taco Tuesdays as much as we do and buy your seasoning in bulk, then you’ll need about 3 tablespoons. Bring to a boil and cook for about two minutes or until the mixture has thickened.

Now here’s the wild and crazy fun part! Cover your tots!! Load those babies up!! Layer on the ground beef! The cheddar cheese (or taco or Mexican blend)! Throw on some of that shredded lettuce!! Drizzle with taco sauce and then add a big ole dollop of sour cream!! Go nuts!! This recipe is so easy and I love that it can be modified to suit everyone’s tastes. Skip the lettuce and add beans. Plop on some guacamole! I’m giving you permission to play with your food!
