Broccoli Cheese Spread

Broccoli Cheese Spread

Broccoli Cheese Spread is such a simple recipe but it’s so amazingly good. You absolutely need this quick and easy appetizer recipe in your arsenal. I mean could there be a more classic combination than broccoli and cheese? I don’t think so! Just try it and see. It’s near impossible to resist the lusciousness of this rich and creamy dip. You won’t believe how easy it is to make. Serve it up for a party or crowd, whip it together quickly when company stops by, or hoard it all for yourself while binge watching your fave Netflix series. This versatile dip can be ready at the drop of a hat or even made ahead of time. Pop it in the oven and it’s done in 20 minutes. Go ahead and hit the print button already!

Here’s all you’ll need: cream cheese, sour cream, Italian salad dressing mix, frozen chopped broccoli, cheddar cheese, and crackers for dipping.

Broccoli Cheese Spread Ingredients list

Five ingredients, that’s it just five ingredients! Let’s get this party started!! Soften the cream cheese and place it in a large bowl. You can leave the cream cheese out for a bit or nuke it in the microwave for a few seconds. It’s easier to mix when it’s softened. Using a hand mixer, blend together the cream cheese, sour cream and Italian salad dressing mix. You can find the salad dressing mix in the salad dressing aisle at your local grocer. It usually comes in a packet or sometimes in a box if it’s a two-pack.

Cream cheese, sour cream, and Italian dressing mix blended together in a large mixing bowl.

Thaw the frozen broccoli. You may need to drain it as well and pat it dry. You can also chop up any especially large broccoli florets that slipped through the cracks. I like all my pieces to be bitesize. Next fold in the broccoli and 1-1/2 cups of cheddar cheese. I love sharp cheddar! The sharper the better!! My hubby always seems to gravitate towards mild. So whatever floats your boat will work just fine.

Chopped broccoli florets and shredded cheddar cheese are folded into the Broccoli Cheese Spread.

Spray a shallow 1-quart baking dish lightly with cooking spray. I used my Corningware 1-qt dish but a pie plate also works greats for dips or spreads. Spoon the Broccoli Cheese Spread evenly into the baking dish. Broccoli Cheese Spread spooned into a baking dish.

Top with the remaining cheese and bake in a 350 degree preheated oven for 20 minutes. That’s it! Seriously so easy!!

And so cheesy!!! Grab a cracker before it’s gone because I’m diving right into the Broccoli Cheese Spread. Speaking of broccoli and cheese…Have you tried our Broccoli Cheese Soup?

Tropical Fruit Salsa with Cinnamon Chips

Tropical Fruit Salsa with Cinnamon Chips

Raise your hand if you could use a little more fruit in your life. Well our Tropical Fruit Salsa with Cinnamon Chips is here to help you with that. Fruit Salsa makes the perfect appetizer or snack for summer because it’s so light and refreshing. You’ll be shoveling this stuff in your mouth by the spoonful. But don’t miss out on the cinnamon chips! They bake up sweet, crispy, and delicious and make the perfect vessel for this colorful fruit medley. The tropical fruit blend is a surefire winner, but you can also shake it up a bit and swap out for whatever fruit combinations you like. Bananas, blueberries, or blackberries are a great place to start experimenting.

Here’s all you’ll need: strawberries, navel orange, kiwi, crushed pineapple, lemon juice, sugar, flour tortillas, butter, sugar, and ground cinnamon.

Fruit Salsa with Cinnamon Chips ingredients list

You’re gonna love this recipe because it’s super easy and can even be prepped ahead of time. Let’s start by prepping the fruit. Chop the strawberries, orange, and kiwi. The kiwi will need to be peeled first, of course.

Strawberries chopped on a cutting board.

Combine all 4 fruits in a large mixing bowl. Toss in the diced strawberries, orange chunks, kiwi, and crushed pineapple. Be sure to drain the crushed pineapple well otherwise the mixture will be soggy. Run the pineapple through a strainer or even squeeze the juice out with your hands if you have to.

Diced strawberries, navel orange chunks, kiwi chunks, and crushed pineapple in a large glass mixing bowl.

Add the lemon juice and 1-1/2 teaspoons of sugar to the bowl and then mix it all up. Isn’t that just gorgeous?!? Refrigerate fruit salsa until ready to serve.

Lemon juice and sugar being stirred into the fruit mixture.

Our sugary sweet cinnamon coated chips are up next! Combine the cinnamon and 1/3 sugar in a small bowl.

Cinnamon and sugar mixed together in a small glass bowl.

Brush both sides of an 8-inch tortilla with melted butter. Sprinkle with the cinnamon sugar mixture to cover. Then cut each tortilla into 8 wedges using a sharp knife or pizza cutter. Place the wedges on a parchment lined baking sheet. You can spray with cooking spray if you don’t have parchment paper laying around. But seriously, don’t be late to the party. Parchment paper comes in handy all.the.dang.time!

8 inch flour tortilla brushed with melted butter and sprinkled with cinnamon sugar mixture.

Bake in a 350 degree preheated oven for 12-14 minutes or until just crisp. Thirteen minutes was right on the money to get that perfectly crunchable chip for my oven. Grab one to sample if you’re not sure! Ok maybe grab two to sample. No judgment!! I had to run a couple of batches to get all the chips to fit.

Serve the cinnamon chips with the Tropical Fruit Salsa and go to town baby!!! Seriously get after it! When you’re finished with this recipe, make sure you check out our Banana Split Cake! Just another tasty treat that’ll have you licking the bowl clean.

Pressure Cooker Cheddar Bacon Beer Dip

Pressure Cooker Cheddar Bacon Beer Dip

I know you’ve been waiting for this post all week! It’s my very FIRST recipe made in a pressure cooker!! Are you excited? I’m excited because it actually worked!! YAAAAYYYYY!!!!!! When Cosori asked me to test out their 6-Quart Premium Pressure Cooker I knew that I had to start with an easy recipe. Like something that would be totally foolproof. This Pressure Cooker Cheddar Bacon Beer Dip is the perfect recipe to get your feet wet. This creamy, luscious, totally irresistible dip will be the life of your next party. It’s over the top cheesy, bacon-y, and loaded with lots of beer flavor of course. It pairs amazingly with our Beer Pretzels, but you could also use toasted bread, chips, veggies, or just about anything for dipping. I think I’ve found our new go to snack for Game Day!!!

Here’s all you’ll need: cream cheese, sour cream, Dijon mustard, garlic powder, beer, bacon, cheddar cheese, heavy whipping cream, green onions, and Beer Pretzels for dipping.

First let’s cook and crumble the bacon. I love this No Mess Bacon method! It’s my go to every. dang. time. This recipe calls for ALOT of bacon but isn’t that how you know it’s going to be good?!? I mean what would Cheddar Bacon Beer Dip really be without the bacon? Oh and before I forget, you’re gonna wanna set aside about 2 tablespoons of that bacon to garnish.

Then combine the cream cheese, sour cream, mustard and garlic in a greased pressure cooker. Beat with a hand blender until well combined. Yup! You can mix it all up right in the pot. That’s actually my favorite thing about pressure cooking so far, every recipe feels like a one pan wonder.

Next stir in the beer and the bacon (but not the two tablespoons that we set aside). We always use Bud Light cause that’s how we roll, but any ale will work just fine. Just stay away from dark varieties. Secure and lock the lid to the pressure cooker ensuring that the steam vent is closed. Select the manual function, adjust the pressure to medium, and set the cook timer for 5 minutes. Seriously isn’t this so easy??? Meanwhile you might as well slice up those green onions because I mean there’s really nothing else to do!

When cooking is finished, use the quick-release pressure valve and release pressure according to manufacturer’s directions. I always wear an oven mitt for this part. Safety first! Select the saute setting and adjust the temp to normal heat (about 250-275 degrees). Add the cheese and heavy cream. Mmm!! SO Cheesy!!!

Cook and stir for about 5 minutes until the cheese is completely melted and the mixture has thickened slightly. I still can’t believe we’re doing all this in one pot. We literally have one pot, a spatula and some mixing beaters to clean. How is this even possible???
