Typically March Madness means I’m outraged because I’m SO. Over. This. Snow!!! But this year’s a little different. We’re all about basketball right now here in Buffalo. Our hometown team, the University at Buffalo, pulled off a huge upset! If you know Buffalo sports, you know that we love ourselves a good underdog to root for. The 13th-seeded UB Bulls came up with a huge win against the 4th-seeded Arizona Cardinals in the NCAA tournament on Thursday night. The 89-68 point victory marks the very first NCAA tournament win in the school’s history!! Go Bulls!!! Talk about a bracket buster!! #sorrynotsorry We’ll be tuning in tonight to watch the Bulls face off against the Kentucky Wildcats. But what’s a basketball game without the party food?!? Our Speedy Kielbasa Dip is the perfect party snack! It’s great for game day or really any day for that matter. This thick and creamy dip is a family favorite. And it’s my favorite too because it’s so quick and easy to make! How easy you ask??? Well…let’s put it this way…you won’t even have to turn your oven on! It’s 100% completely microwavable!! That’s why Speedy Kielbasa Dip is my go to recipe when I’m in a pinch and need to whip up party snacks in a hurry. You’ll be so happy to have this one in your recipe arsenal.

Here’s all you’ll need: cream cheese, sour cream, milk, mayonnaise, Worcestershire sauce, fully cooked kielbasa sausage, green onions, Parmesan cheese, and Tostitos or crackers for dipping.

Speedy Kielbasa Dip

Start with a microwave safe bowl. Heat the cream cheese uncovered for 1 minute. Stir it up. Boom! You just handled step one like a boss!

Heat cream cheese in a microwave safe bowl for 1 minute.

Next mix in the sour cream, milk, mayo, and Worcestershire sauce. Stir to combine. I know it’s hard to believe but we’re like halfway done with this recipe. A few more steps and it’s going to be AMAZING!!!

Slice up the green onions. And dice up the Kielbasa while you’re at it too! If you really want to be on top of your game, you can have this stuff prepped ahead of time. A lot of times I prep the ingredients and take them with me to the party and then make the dip right there on the spot! After the prep work it literally takes less than 5 minutes in the microwave. Speedy Kielbasa Dip for the win!

Slice up the green onions. Then dice up the Kielbasa.

Now toss in the kielbasa, 1/4 cup of green onions, and Parmesan cheese. Stir to combine. Microwave for 1 and a half to 2 minutes. Stir. Then microwave for another 1 and a half to 2 minutes or until heated through.

Toss in the kielbasa, 1/4 cup of green onions, and Parmesan cheese. Stir to combine. Microwave for 3-4 minutes, stirring once.

Top with the remaining 1/4 cup of green onions to pretty it up a bit. Serve with chips or crackers for dipping. Really though, can you believe how easy that was?!? She shoots…she scores!! SWISH!!

Ingredients
  • 1 package (8 ounces) cream cheese
  • 1/2 cup sour cream
  • 1/3 cup milk
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon Worcestershire sauce
  • 8 ounces fully cooked kielbasa or Polish sausage, finely chopped
  • 1/2 cup sliced green onions, divided
  • 1/4 cup grated Parmesan cheese
  • Tostitos or crackers for dipping
Directions
  • Step 1 In a microwave safe bowl, heat the cream cheese, uncovered, for 1 minute.
  • Step 2 Mix in the sour cream, milk, mayo, and Worcestershire sauce. Stir to combine.
  • Step 3 Add the kielbasa, 1/4 cup of green onions, and Parmesan cheese. Stir to combine.
  • Step 4 Microwave for 3-4 minutes stirring once, halfway through.
  • Step 5 Top with the remaining 1/4 cup of green onions. Serve with chips or crackers. Enjoy!!

Is it just me or does it feel like once December 1st hits on the calendar, time actually speeds up??? I swear I blink and suddenly it’s Christmas Eve! Maybe it’s the millions of things I have to do from now until then. Or maybe I just get wrapped up in all of that holiday excitement. Or maybe I just over commit myself. It’s probably that one! Who can relate??? So instead of stressing this year, I’m just working smarter and not harder! What if I told you that you can make your holiday appetizers right now and then just toss them in the oven when you need them? You would be all in right?!? I know I sure am! I’ve got a tray of babies in my freezer right now, prepped and ready to go! These Cheesy Sausage Balls are the perfect accompaniment to breakfast, brunch, dinner, or any holiday party. They only require a few ingredients, you can whip up a large batch super quick, AND they are Dee-licious!!! Even my picky eaters love them! Clear some freezer space and let’s get ready to show the holidays whose boss!!

Here’s all you’ll need: pork sausage, Bisquick baking mix, cheddar cheese, onion, celery, black pepper, and minced garlic (I definitely recommend “cheaters” garlic. Anything to make this even easier!)Alright! Are you ready??? Just like December, blink and you’ll miss the instructions. Here we go! Step number one, toss every single one of the ingredients into one big bowl. Yup! Everything!!! 

Step Two, mix everything together with your hands. Squish it all up. The perfect bite will have a little bit of celery, a little bit of onion, and a little bit of cheese! That’s what we’re going for here.

Step Three, roll the mixture into 1 inch balls. If you’re really feeling ambitious you can use a cookie scoop to measure them out and keep them all uniform, but it’s totally not necessary. Just try to keep them all about the same size so they all cook evenly. Place in a 13 X 9 baking pan. It’s ok if they’re touching!

Can’t wait to eat ’em? Bake in a 375 degree preheated oven for 20-25 minutes or until golden brown. Cool for 5 minutes before serving. Planning on saving them? Freeze in a baking pan. I love the disposal ones from the Dollar Store! Cover with aluminum foil and store in the freezer for up to two months. When ready to use, remove from the freezer and thaw for 15 minutes on countertop. Bake in a 375 degree preheated oven for 20-25 minutes or until golden brown. I like to freeze in small batches so I can just use them as needed.

Neighbors drop in unexpectedly? Throw in some sausage balls! Last minute holiday party at work? Bring a tray of sausage balls! Need an appetizer for Christmas Eve? Sausage Balls to the rescue!!!

  • 2 16-oz packages Jimmy Dean Pork Sausage (original flavor)
  • 1-1/2 cups Bisquick baking mix
  • 4 cups shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 2 teaspoons black pepper
  • 2 teaspoons minced garlic
Directions
  • Step 1 Combine all ingredients in a large mixing bowl. Mix well.
  • Step 2 Roll the meat mixture into 1 inch balls. Place in a 13 X 9 baking dish.
  • Step 3 Can’t wait to eat ’em? Bake in a 375 degree preheated oven for 20-25 minutes or until golden brown. Cool for 5 minutes before serving.
