S’mores Bars

I’m pretty sure S’mores are the official dessert of Summer. Well if you like S’mores then you’re gonna flip out over S’mores bars!! These deliciously decadent bars taste just like S’mores but without all the mess. Heck, you can even skip the bon fire which means you can make them all year round. No excuses! We start with a layer of graham cracker goodness, followed by loads of chocolatey chunks, topped with ooey, gooey marshmallow creme and more graham cracker crumbles. If you’re a sucker for sweets then you ought to know this dessert is seriously addictive!!! No, for real. S’mores Bars will leave you drooling and craving more. Don’t say I didn’t warn ya!

Here’s all you’ll need: butter, sugar, egg, vanilla extract, flour, graham crackers, baking powder, salt, milk chocolate candy bars, and marshmallow fluff.

S’mores Bars were an instant hit in my house, so let’s get started on this ASAP so you can enjoy them too! Add the butter and sugar to a large bowl and cream with a mixer until light and fluffy. You’ll want the butter to be a little bit soft so it’s easier to mix. You can leave it on the counter for a bit to soften, or if you’re like me you can “cheat” and nuke it in the microwave for about 15 seconds. A girl’s gotta do what a girl’s gotta do!

Next beat in the egg and vanilla extract. Just a teaspoon will do ya! Blend on a low speed until the egg is fully incorporated.

In a separate bowl, combine the flour, graham cracker crumbs, baking powder and salt. You can use a food processor to make the graham cracker crumbs or if you’re in a pinch, put them in a ziplock bag and crush away by hand. About 6 full size graham crackers should get you right around 3/4 cup of graham cracker crumbs.

Gradually add the dry ingredients into the wet mixture. Mix well. This delicious batter will serve as both graham cracker layers. So be sure to set aside 1/2 cup of the mixture (for our top layer).

Press the remaining graham cracker mixture into the bottom of a 9X9″ baking pan. You can grease with cooking spray, but I find that lining with parchment paper helps these sticky bars to pull right out of the pan. Press the chocolate bars into the crust, then spread the marshmallow creme over top. If you find that marshmallow creme is too sticky to work with, you can nuke it in the microwave to make it easier to spread.

And lastly, grab that reserved graham cracker mixture from earlier and crumble it over the top. Go ahead. Just sprinkle it right on there. You really can’t mess this part up! Bake in a 350 degree, preheated oven for 25-30 minutes or until the graham cracker topping is golden brown. Remove from the pan and cool on a wire rack then cut into bars.

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1-1/3 cups all-purpose flour
  • 3/4 cup graham cracker crumbs (about 6 full-size crackers)
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 5 milk chocolate candy bars (1.55 ounces each / regular sized candy bars)
  • 1 cup marshmallow creme (Fluff)
Directions
  • Step 1 Add the softened butter and sugar to a large bowl and cream with a mixer until light and fluffy. Beat in the egg and vanilla extract.
  • Step 2 In a separate bowl, combine the flour, graham cracker crumbs, baking powder and salt. Gradually add the dry ingredients into the wet mixture. Mix well. **Set aside 1/2 cup of the mixture (for our top layer).**
  • Step 3 Line a 9X9″ baking dish with parchment paper. Press the remaining graham cracker mixture into the bottom of the baking pan.
  • Step 4 Press the chocolate bars into the crust, then spread the marshmallow creme over top. Crumble the reserved graham cracker mixture over top.
  • Step 5 Bake in a 350 degree, preheated oven for 25-30 minutes or until the graham cracker topping is golden brown. Remove from the pan and cool on a wire rack then cut into bars. Enjoy!

Cheesy Grilled Potatoes 

My hubby was born and raised in the country. He’s a country boy at heart. One day we’re hoping to fulfill our dreams, buy some land, and lead a simpler life out in the country away from the hustle and bustle…but until then, we’re stuck here in the city and making the best of it! We live in a neighborhood where the houses are pretty much right on top of one another. So over the years I’ve done my best to clean up our yard and make it into our own little sanctuary. Building a garden box and planting a vegetable garden is one of the little things that we’ve done to bring a little country to our city life. This is my cute little kitchen garden! Isn’t it adorable?!? The fence panels are detachable so I can take them off and easily have access to the garden. It also keeps the wiener dogs out! I swear the second I remove one of those panels there’s a dachshund walking around in my garden! Every. Single. Time. This year we’ve planted green and yellow beans, 4 kinds of tomatoes, 2 kinds of peppers, 2 kinds of eggplant, cucumbers, basil, sage, dill, rosemary, thyme, oregano, and chives. Notice how I saved the best for last! We get to use some of those chives in this next recipe, Cheesy Grilled Potatoes!!!

This recipe sure is one of our absolute favorites in the summertime! Of course it involves the grill! It pairs well with just about any summer meal. Toss some meat on the grill alongside Cheesy Grilled Potatoes, add a green veggie or salad, and you have yourself a nice little meal, all without even turning on the stove! I mean c’mon! Isn’t getting outside what summer is all about???

The above photo was taken in June. And here we are now in July! Can you believe I just weeded and thinned out those tomatoes?!? Things are looking good this year!


Here’s all you’ll need: Red potatoes, onions, bacon, pizza blend cheese (it’s a mix of mozzarella and cheddar! Score!), parmesan cheese, butter, chives, seasoned salt and pepper.

Wash and dry potatoes. Then dice them into 1 inch cubes.


Chop onion into small pieces.


In a large bowl, combine potatoes, onions, parmesan cheese, chives, seasoned salt, and pepper. If you don’t have fresh chives on hand, you can always use freeze dried chives. I’ve made the recipe both ways and it always comes out delicious!


Fold all the ingredients together until mixed well. Shake those potatoes around!


Roll out a sheet of aluminum foil, about 12-15 inches long. Spray with cooking spray.


Place potatoes in the center of the foil. Heavy duty aluminum foil works best! We always use the heavy duty stuff for anything grill related.


Dot with butter. They don’t look too impressive now, but wait til the end!! The cheese and bacon are the big finish !!


Cover with another sheet of foil sprayed with cooking spray. Fold the edges of the foil to form a packet. Be sure to seal up all the edges nice and tight! I love that foil packets mean less dishes!! Maybe that’s why Cheesy Grilled Potatoes were an instant hit……or maybe it was the cheese!


Place foil packet on the grill over medium heat for about 13-15 minutes per side or until potatoes or tender. That’s 26-30 minutes total. Don’t forget to flip the packet over halfway through! Keep the grill covered throughout cooking.


With oven mitts or heat safe gloves, carefully unfold the edges of the foil packet. Watch out for hot steam as you open the packet! Sprinkle on the bacon (use our no mess bacon technique found here!) and cheeses. Reseal foil packet and grill 3-5 minutes longer until cheese is melted. It won’t take long since the potatoes are already piping hot! I can see the deliciousness starting to come together!!

Open foil carefully to allow steam to escape. Serve this beautiful dish right on the aluminum foil and watch them disappear!! This is a great recipe to take camping as well. Just pre cook the bacon or bring along some bacon bits! Sounds like my kind of camping!!

  • 3 large red potatoes, peeled and cut into 1-inch cubes
  • 1 medium onion, chopped
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon minced chives
  • 1/2 teaspoon seasoned salt

  • 2 tablespoons butter
  • 1/2 cup crumbled cooked Bacon
  • 1 cup Pizza blend cheese (or 1/2 cup cheddar and 1/2 cup mozzarella)
Directions
  • Step 1 Dice potatoes into 1 inch cubes. Chop onion into small pieces.
  • Step 2 In a large bowl, combine potatoes, onions, parmesan cheese, chives, seasoned salt, and pepper. Mix well.
  • Step 3 Roll out a sheet of aluminum foil, about 12-15 inches long. Spray with cooking spray. Place potatoes in the center of the foil. Dot with butter.
  • Step 4 Top with another piece of aluminum foil. Fold the edges of the foil to form a foil packet.
  • Step 5 Grill over medium heat for about 13-15 minutes per side or until potatoes or tender. Flip halfway through.
  • Step 6 Carefully unfold the edges of the foil packet. Sprinkle with bacon and cheeses.Reseal foil packet and grill 3-5 minutes longer until cheese is melted.
  • Step 7 Open foil carefully to allow steam to escape. Serve and enjoy!
