In a medium sized bowl, cream together the butter and confectioners’ sugar until light and fluffy. The confectioners’ sugar is the secret ingredient that keeps this pastry so light yet crisp. Gradually add in the flour (about 1/2 cup at a time) and mix well with each addition.

Grease an 11-in. fluted tart pan with removable bottom with cooking spray. If you don’t have a tart pan with a removable bottom, a pizza pan with sides would work great as well. Press the pastry dough into the bottom and up the sides of the tart pan. Pierce the pastry dough with a fork multiple times. This helps to prevent bubbles from forming in the pastry crust while it’s baking.

While we’re waiting for the tart shell to cool we can go ahead and get started on the white chocolate cream cheese fruit tart filling. Place the white chocolate chips in a microwave safe bowl. Heat in the microwave for 30 seconds. Remove the bowl from the microwave and generously stir. Drain the oranges, reserving 1/4 cup of fruit juice to be used later for the glaze. Drain the pineapples, again reserving 1/4 cup of the juice to use for the glaze. Peel the kiwi and cut into 1/4-inch slices. Cut the stems from the strawberries and cut the fruit into 1/4-inch slices as well. Next layer the fruit onto the filling. You can opt for a pretty pattern or design if you wanna get all fancy on us. But to me just the layers and layers of fruit are pretty enough. And let’s not forget about that citrusy sweet fruit glaze to really make this baby shine! Combine the white sugar and cornstarch in a small sauce pan. Stir in the lemon juice and reserved pineapple and orange juices from earlier. Bring the mixture to a boil over medium heat. Cook, stirring constantly for 2 minutes, or until the mixture has thickened. Allow the glaze to cool and then gently brush it over the fruit to cover. Look at that shine!   • 3/4 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 1-1/2 cups all-purpose flour
  • FILLING:
  • 1 package (12 ounces) white baking chips
  • 1/4 cup heavy whipping cream
  • 1 package (8 ounces) cream cheese, softened
  • 1 can (11 ounces) mandarin oranges
  • 1 can (8 ounces) pineapple chunks
  • 1 pint fresh strawberries, sliced
  • 2 kiwifruit, peeled and sliced
  • GLAZE:
  • 3 tablespoons sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon lemon juice
  • fresh mint, optional (to garnish)
Directions
  • Step 1 FOR THE TART SHELL: In a medium sized bowl, cream together the butter and confectioners’ sugar until light and fluffy. Gradually add in the flour (about 1/2 cup at a time) and mix well with each addition.

  • Step 7 FOR THE GLAZE: Combine the white sugar and cornstarch in a small sauce pan. Stir in the lemon juice and reserved pineapple and orange juices from earlier. Bring the mixture to a boil over medium heat. Cook, stirring constantly for 2 minutes, or until the mixture has thickened. Allow the glaze to cool and then gently brush it over the fruit to cover. S’mores Bars

I’m pretty sure S’mores are the official dessert of Summer. Well if you like S’mores then you’re gonna flip out over S’mores bars!! These deliciously decadent bars taste just like S’mores but without all the mess. Heck, you can even skip the bon fire which means you can make them all year round. No excuses! We start with a layer of graham cracker goodness, followed by loads of chocolatey chunks, topped with ooey, gooey marshmallow creme and more graham cracker crumbles. If you’re a sucker for sweets then you ought to know this dessert is seriously addictive!!! No, for real. S’mores Bars will leave you drooling and craving more. Don’t say I didn’t warn ya!

Here’s all you’ll need: butter, sugar, egg, vanilla extract, flour, graham crackers, baking powder, salt, milk chocolate candy bars, and marshmallow fluff.

S’mores Bars were an instant hit in my house, so let’s get started on this ASAP so you can enjoy them too! Add the butter and sugar to a large bowl and cream with a mixer until light and fluffy. You’ll want the butter to be a little bit soft so it’s easier to mix. You can leave it on the counter for a bit to soften, or if you’re like me you can “cheat” and nuke it in the microwave for about 15 seconds. A girl’s gotta do what a girl’s gotta do!

Next beat in the egg and vanilla extract. Just a teaspoon will do ya! Blend on a low speed until the egg is fully incorporated.

In a separate bowl, combine the flour, graham cracker crumbs, baking powder and salt. You can use a food processor to make the graham cracker crumbs or if you’re in a pinch, put them in a ziplock bag and crush away by hand. About 6 full size graham crackers should get you right around 3/4 cup of graham cracker crumbs.

Gradually add the dry ingredients into the wet mixture. Mix well. This delicious batter will serve as both graham cracker layers. So be sure to set aside 1/2 cup of the mixture (for our top layer).

Press the remaining graham cracker mixture into the bottom of a 9X9″ baking pan. You can grease with cooking spray, but I find that lining with parchment paper helps these sticky bars to pull right out of the pan. Press the chocolate bars into the crust, then spread the marshmallow creme over top. If you find that marshmallow creme is too sticky to work with, you can nuke it in the microwave to make it easier to spread.

And lastly, grab that reserved graham cracker mixture from earlier and crumble it over the top. Go ahead. Just sprinkle it right on there. You really can’t mess this part up! Bake in a 350 degree, preheated oven for 25-30 minutes or until the graham cracker topping is golden brown. Remove from the pan and cool on a wire rack then cut into bars.

  • 3/4 cup graham cracker crumbs (about 6 full-size crackers)
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 5 milk chocolate candy bars (1.55 ounces each / regular sized candy bars)
  • 1 cup marshmallow creme (Fluff)
Directions
  • Step 1 Add the softened butter and sugar to a large bowl and cream with a mixer until light and fluffy. Beat in the egg and vanilla extract.
  • Step 2 In a separate bowl, combine the flour, graham cracker crumbs, baking powder and salt. Gradually add the dry ingredients into the wet mixture. Mix well. **Set aside 1/2 cup of the mixture (for our top layer).**
  • Step 3 Line a 9X9″ baking dish with parchment paper. Press the remaining graham cracker mixture into the bottom of the baking pan.
  • Step 4 Press the chocolate bars into the crust, then spread the marshmallow creme over top. Crumble the reserved graham cracker mixture over top.
  • Step 5 Bake in a 350 degree, preheated oven for 25-30 minutes or until the graham cracker topping is golden brown. Remove from the pan and cool on a wire rack then cut into bars. Enjoy!

I’ll admit it! We jumped on the trend train when it comes to cauliflower. We’ve tried the cauliflower pizza crust, and the breadsticks, and the cauliflower rice. But Smoky Roasted Cauliflower is hands down our favorite way to prepare it! The secret ingredient is smoked paprika. It gives this effortless side dish such a distinct taste. You’ll be amazed at how a few simple ingredients can kick up the flavor in this easy recipe. But wait…there’s more!! Did I mention that Smoky Roasted Cauliflower is actually good for you?!? Bonus!! I know right?!? A girl has to balance all those freak shakes and cookies that you see on instagram with some vegetables every once in awhile. This knock your socks off side pairs perfectly with summer BBQs but would also make a lovely accompaniment to Easter dinner. Wow your guests this year with an unexpected flavor!

Here’s all you’ll need: cauliflower, olive oil, smoked paprika, salt, garlic and fresh parsley. Buffalo folks! You know we got our smoked paprika at Marilla Country Store but you can also find it with the spices and seasonings at your local grocer.

Start by chopping the cauliflower into 1 inch florets. Rinse well and then place it in a large bowl. I like my pieces nice and bitesize so I can just pop em in my mouth!

Next we’ll mix up our seasonings. Combine the olive oil, salt, and smoked paprika. I know it sounds simple but trust me when I say the flavor from these 3 little ingredients will be off the hook! Drizzle over the cauliflower.
