Pressure Cooker Beef Brisket

How many of you got a pressure cooker for Christmas? Well you’ve come to the right place because today I’m sharing the most delicious, mouth watering Pressure Cooker Beef Brisket recipe. If you’re a pressure cooker newbie, this recipe is a great place to start. And even if you’re an old pro, you’ll love the flavor this brisket brings to the table. This Beef Brisket takes just 10 minutes to prep and cooks up fork tender in just 70 minutes! The thick, rich, pan gravy totally completes the meal. Serve over mashed potatoes and you’ve got yourself a wonderful, no fuss, family dinner. I can get on board with that!

Here’s all you’ll need: beef brisket, liquid smoke, celery salt, pepper, salt, onion, beer, Worcestershire sauce, cornstarch and cold water. Seriously that’s it!

First let’s make the rub! This is your basic salt and pepper rub with a little celery salt for an dimension of flavor. Combine the celery salt, pepper, and salt in a small bowl. Easy as can be! Of course you can absolutely substitute your own family favorite rub in place of this one.

Next cut the brisket in half. Basically the only reason we’re cutting it is so it fits better in the pressure cooker. Rub the brisket with the liquid smoke. Then cover both hunks of meat with our salt and pepper rub. Be sure to get both sides.

Place the beef brisket in the pressure cooker fatty side up. We trimmed ours beforehand but it’s completely ok to leave the fat on for this recipe. Slice up the onions into strips and toss them on top of the beef brisket. Combine the beer and Worcestershire sauce and pour over the meat. We almost always use Bud Light when cooking with beer and this recipe is no different. It’s our favorite! You always want to lean towards a beer that you would actually drink. Adding liquid is the MOST important step to pressure cooking! The liquid will create the steam which builds the pressure. No liquid, no pressure. If beer’s not your thing you can swap out for beef broth, but you absolutely MUST put some sort of liquid in the pot.

Securely lock the pressure cooker lid according to manufacturer’s directions and make sure the vent is in the closed position (otherwise your machine will never reach pressure). Choose the manual setting and crank that baby up to the highest pressure setting. Set the timer for 70 minutes AND…… go read a book, clean the house, prepare a few side dishes, scroll through our Insta feed, drink some wine, relax!!! Seriously you’ve got 70 minutes all to yourself!! I LOVE this recipe!!!

When the meat is finished cooking, allow the pressure to release naturally for 10 minutes, then use the quick release valve to release the remaining pressure (always be sure to follow the manufacturer’s directions as that steam can be HOT!!) If the brisket isn’t fork tender, you can reseal and cook for an additional 10-15 minutes if necessary.

Remove the meat from the pressure cooker, cover with foil to keep warm and set it aside. Leave the cooking juices and onions in the pot. We’re going to use them to make a nice, thick gravy for the meat. Select the saute setting and adjust the temperature to high heat (around 300 degrees should do the trick). Bring the mixture to boil. Meanwhile combine the cornstarch and cold water in a small bowl. Gradually stir into the boiling mixture. Cook, stirring continuously until the mixture has thickened, about 2 minutes. Serve with the beef.

And there you have it! A satisfying, juicy, tender, flavorful beef brisket that your whole family will love…..and you didn’t even have to break a sweat. I can’t believe it either!! Ingredients
  • 1 fresh beef brisket (2-1/2 to 3 pounds)
  • 2 teaspoons liquid smoke
  • 1 teaspoon celery salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 large onion, sliced
  • 1 can (12 ounces) beer or beef broth
  • 2 teaspoons Worcestershire sauce
  • 4 tablespoons cornstarch
  • 1/2 cup cold water
Directions
  • Step 1 Combine the celery salt, pepper, and salt in a small bowl. Cut the brisket in half and rub with liquid smoke. Cover with salt and pepper rub.
  • Step 2 Place the beef brisket in the pressure cooker fatty side up. Cover with onion slices.
  • Step 3 Combine the beer and Worcestershire sauce and pour over the meat. Securely lock the pressure cooker lid according to manufacturer’s directions and make sure the vent is in the closed position. Choose the manual setting, select the highest pressure setting and set timer for 70 minutes.
  • Step 4 When the meat is finished cooking, allow the pressure to release naturally for 10 minutes, then use the quick release valve to release the remaining pressure. If the brisket isn’t fork tender, you can reseal and cook for an additional 10-15 minutes if necessary.
  • Step 5 Remove the meat from the pressure cooker, cover with foil to keep warm and set it aside. Leave the onions and remaining juices in the pot.
  • Step 6 Combine the cornstarch and cold water in a small bowl. Gradually stir into the boiling mixture. Cook, stirring continuously until the mixture has thickened, about 2 minutes. Serve with beef and enjoy!

So, I’ve gotta be honest. I think I’m the only person in America that hasn’t used a Pressure Cooker. Anyone else??? Don’t get me wrong, I’ve been super curious about them. I’ve marveled as my favorite bloggers have shared recipe after recipe using them. But I’m the type of person to hymn and haw over kitchen gadgets for years before making the purchase. Will I really use it? Do I really need it? Where will I store it? Basically it all comes down to is it really WORTH it??? AND pressure cookers scared me a little. I’ve never used one before. I didn’t know how to use one, and I didn’t really know what exactly I would use it for. I mean cooking obviously, but what exactly would I cook in it?!? That’s when the AMAZING people at Cosori stepped in and asked me to test run their COSORI 6 Quart 9-in-1 Multi-Functional Programmable Pressure Cooker. How could I not?!? The Cosori comes fully assembled and is ready to use right from the box. Well that is after you wash the inner pot (which is basically common sense silly…don’t be gross!). It also comes with LOADS of useful accessories such as the lid so you can serve right from the pot. I learned this as a newbie but most brands make you purchase the lid separately! I love the fact that I can leave this on my kitchen island or countertop and serve just like I would with my crockpot.

Cosori also provides a “cheat sheet” for quick reference cooking times. Now this is right up my alley because I’m not a read the directions type of girl. It’s great to be able to glance at it and instantly know how long to cook anything from say oatmeal, to chicken breast, and everything in between. And remember how I had no idea what to cook in this thing? Well the Cosori 6-Quart Pressure Cooker also comes with a handy dandy recipe guide to get you started. I can’t wait to explore it!

Soooooo…..even though I’m not a read the directions type of girl, I made an exception here because I wanted to be 100% sure that I was getting the full benefit from this machine. You’ll definitely want to start with the “water test” to make sure your machine is in proper working condition, but honestly after that, using this pressure cooker is as easy as pushing a button. Cosori really has thought of EVERYTHING when it comes to the safety features on this thing too. Long gone are the days of urban legend stories where your mom’s cousins’ best friend had a pressure cooker explode all over her kitchen. Today’s pressure cookers are pretty much foolproof. Just line the lock up with the arrow (see above) and the lid is locked into place. It even beeps to let you know that you did it correctly. Once it’s pressurized, you can’t unlock it until the pressure it released. Easy peasy! You’ll also find these super helpful stickers that point out the machine’s best safety features. This is wonderful when you’re familiarizing yourself with the pressure cooker for the first time. (Not into stickers on your kitchen gadgets? Don’t worry! They were super easy to remove and peeled right off in one piece).

Once you’ve mastered locking the top, you’ll want to turn your attention to the back of the machine. This is where you’ll find the pressure release valve. When you’re cooking you’ll want to make sure this is turned to locked (otherwise you’ll just be releasing all the steam and it will never build pressure). This is also where you can quick release pressure from the machine. I was uber safe and wore an oven glove when I unlocked the knob. I’m the kind of person that’s ALWAYS safety first in the kitchen. The steam shoots out of here pretty fast so I think the oven glove will be my method of choice when using the quick release valve option. So during your first use, there will come a time when you ask yourself, Is this thing really working? Did I do it right? You’ll know the machine is building pressure because you’ll see this little red float valve rise. Rest assured you’re doing it right! The machine will also beep to alert you when it’s pressurized. These features are exactly what I needed to get me through that pressure cooker rookie hump! The cooking manual doesn’t really say how long the machine takes to pressurize but I’d say it’s about 15 minutes give or take. This was extra time that I didn’t really anticipate but you’re not tied to the machine during those 15 minutes so it’s really not a big deal. Once you master the safety features, using the Cosori 6-Quart Pressure Cooker is literally as easy as pushing as button. It’s seriously that simple! The innovative people at Cosori have worked hard at perfecting this machine so you don’t have to. This pressure cooker doesn’t just do pressurized cooking. Oh no!! The possibilities are pretty much endless! It also doubles as a rice cooker, a crockpot, a steamer, a food warmer, the list goes on and on. So yeah it’s another big and bulky kitchen gadget, but you can free up some cabinet space by getting rid of that rice maker that you’ve never even used (speaking from experience).

Remember how I had no idea what to cook in this thing? Well now it’s more like what CAN’T I cook in this thing? And the 17 preset Smart Cooking programs make it a breeze to do so. I’ve already made a Pressure Cooker Cheddar Bacon Beer Dip as well as Pressure Cooker Beef Tips. But seriously how fun would if be to try out the homemade yogurt function? The Cosori recipe book even has a recipe for NY style cheesecake! Never in a million years did I think I could bake a cheesecake this way.

The cooking times are super fast too! I love that you don’t have to babysit this machine. You can leave the kitchen and put your attention elsewhere while your food is cooking. The timer will beep to let you know your food is done. But don’t worry about rushing to the kitchen just yet. When your food’s done cooking, this pressure cooker automatically flips to a warming feature to keep your meal hot and ready. How cool is that? I’m starting to think I need the people at Cosori to come and streamline the rest of my life!! Any takers?!?
