Oatmeal Raisin Cookies

I’ve never met a cookie that I didn’t like and these Oatmeal Raisin Cookies are no different. I’ve gotta warn you though…they pack a wallop of flavor and are highly addictive. Just like the ones Grandma used to make, this delicious cookie is crispy on the outside, soft on the inside and oh so satisfying. Jam packed with sweet brown sugar, spicy cinnamon, hearty oats, chewy raisins, and crunchy pecans, this trusty standby is something that everyone can agree on. Fill up the cookie jar and watch them disappear!

Here’s all you’ll need: shortening, white sugar, brown sugar, eggs, vanilla extract, flour, baking soda, salt, cinnamon, old-fashioned oats, raisins, and pecans. Oatmeal Raisin Cookies ingredients list

And I haven’t even told you the best part yet. Oatmeal Raisin Cookies are easy peasy to make! Let’s get started…so we can get snacking. In a large bowl, cream together the shortening and sugars. Yep, both of them. I start with a hand mixer set to a low speed and then gradually increase to medium until the mixture is soft and fluffy.

Next beat in the eggs one at a time, mixing well between each addition. Then blend in the vanilla extract as well. I told you this was simple!

Mix in the baking soda, salt, and cinnamon and blend until well combined. Then add in the flour, half a cup at a time until just combined. I like to add my ingredients this way instead of mixing the dry ingredients together in a separate bowl and adding them all at once. Anything to save a dish or two and it always works out just fine for me. Our cookie dough base is looking pretty delish already!!

You’re going to need a little muscle for this next part! Ditch the hand mixture and stir in the oatmeal, raisins and pecans by hand. A wooden spoon works best because the Oatmeal Raisin Cookie dough will be thick and sticky. And doesn’t it feel more nostalgic too?!? Make sure to mix it up really, really good. We’re shooting for a little bit of oats, raisins and pecans in every bite! Feeling nutty enough? Of course you can skip the pecans if you’re not into that sort of thing.

Roll the dough into 1 inch balls and place them at least 2 inches apart on a parchment lined baking sheet. Just a heads up…these babies spread…..A LOT!!!! I find that I get my best baking results with parchment paper as opposed to cooking spray. If you want to elevate your cookie game, I highly recommend trying it!

A cookie scoop is another great tool to have handy. I typically use the 1 or 1.5″ size for cookie baking (unless I’m making some giant, monster sized cookies). This one simple tool will keep your cookies uniform in size, which means they’ll all bake at the same rate.

And one more super simple tip for perfect cookies every time is to rotate the baking sheets halfway through baking. I always use the top and middle racks in my oven, never the bottom. And then halfway through baking time, I swap positions. So the cookies that were baking on the top rack get bumped down to the middle rack and the cookies that were baking on the middle rack get moved up to the top. I also rotate the baking sheets so that the cookies that were in the front of the oven are now in the back and vice versa. This helps all the cookies to bake evenly.

So anyways, now that you’ve got my best tricks up your sleeve, back to these Oatmeal Raisins! Flatten the balls slightly with the back of your hand, the back of the wooden spoon, or the back of a baking cup. Bake in a 350 degree preheated oven for 10-11 minutes. The cookies will be just beginning to brown. If the middles still look a little soft, that’s ok. They’ll be fine. Just trust me on this. It’s better to under bake this recipe than to over bake it.

You can let them sit on the baking sheet for one minute (at the very most) or remove immediately and cool on wire baking racks (the countertop will work too). The cookies will be very soft so be sure to use a spatula. OMG, don’t they look delightful?!? Full disclosure, I’ve already made Oatmeal Raisin Cookies twice this week!!   • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 cup raisins
  • 1 cup coarsely chopped pecans
Directions
  • Step 1 In a large bowl, cream together the shortening and sugars. Beat in the eggs one at a time, mixing well between each addition. Blend in the vanilla extract.
  • Step 2 Mix in the baking soda, salt, and cinnamon and blend until well combined. Then add in the flour, half a cup at a time until just combined.
  • Step 3 Stir in the oatmeal, raisins and pecans with a wooden spoon. Mix well.
  • Step 4 Roll the dough into 1 inch balls and place them at least 2 inches apart on a parchment lined baking sheet. These cookies will spread! Flatten the balls slightly with the back of your hand.
  • Step 5 Bake in a 350 degree preheated oven for 10-11 minutes. Do not over bake! The edges will begin to brown but the middles will still be a bit soft.
  • Step 6 Cool on wire baking racks and enjoy!

We’ve been baking up a storm here at Happylifeblogspot this December and I don’t see it stopping anytime soon. I wanted to share with you one of my all time favorite, very unique, cookie recipes this year. Cappuccino Swirl Cookies look super duper impressive but are WAY easier to make than you think. This coffee flavored cookie has a hint of Irish cream which pairs wonderfully with the gorgeous little chocolate swirled topper. I like to make these at Christmas time but really this cookie is great any time of the year. Obviously you’ll need a hot cup of coffee for dunking. I mean it goes without saying, right?!?

Here’s all you’ll need: butter flavored shortening, white sugar, baking powder, salt, egg, Baileys coffee creamer (you can substitute Baileys or just plain ole milk), vanilla extract, flour, instant coffee, and Hershey’s hugs.

So about that coffee flavored liqueur, you can totally swap out for milk if you don’t have any Baileys on hand. I got a little creative and combined the two and used a Baileys flavored coffee creamer. And I’m SOOOO glad that I have leftovers for my coffee too!!! That stuff is delish!!

Beat in the flour a cup at a time with a hand mixer. Knead in the final 1/4 cup by hand. Cover the the dough with plastic wrap and refrigerate for one hour or until firm. Ok so another reason Cappuccino Swirl Cookies are fabulous at Christmas time is because you need to chill the dough. So if you’re making a cookie smorgasbord like me, you can make all your cookie doughs one day, chill in the fridge, and then do all your baking the next day. It’s nice to break it up!

See what I mean? Bake cookies in a 350 degree preheated oven for 9-11 minutes or until the cookie tops start to crack and the sides are almost set. If they’re getting brown then you’ve gone too far so keep a close and watchful eye on these lil guys. While the cookies are baking you’re going to wanna start unwrapping those chocolate candies. We need them ready to roll when the cookies are still hot out of the oven.

Remove the cookies from the oven and immediately press a Hershey’s hug into the center of each cookie. Now I know I’m usually telling you to get those cookies off the baking sheet ASAP but today we’re keeping them on there. The heat from the baking sheet is actually a good thing because we want those Hershey’s hugs to melt. Of course the cookies look gorgeous already and if you’re not brave enough to give this swirl a whirl, then go ahead and move the cookies to a cooling rack (so the Hershey’s hugs don’t melt).

Now for the big finish…..the swirl!!! Let those hot cookies sit for about 5 minutes or so until the Hershey’s hugs are nice and melty. It takes a few tries to get down the technique but I’m confident that you can do it. Using the tip of a knife (of the back of a spoon, whatever floats your boat) slowly run your utensil through the melted hug to swirl. I like to go counter clockwise and I find that a light touch works best. I also find it helpful to start from the outside and work your way in towards the middle.   • 1 teaspoon baking powder

  • 1 Tablespoon coffee-flavor liqueur (or coffee flavored creamer or milk)
  • 1 teaspoon vanilla extract

  • 2 Tablespoons instant coffee crystals
  • 48 Hershey's hugs (chocolate kisses with stripes)

  • Step 1 Add shortening to a large bowl and beat with a hand mixer on medium speed for 30 seconds. Mix in one cup of sugar, the baking powder and salt until light and fluffy.
  • Step 2 Beat in the egg, coffee flavored liqueur (you can substitute milk or coffee flavored creamer) and vanilla and mix until well combined.

  • Step 5 Place balls 2 inches apart on a parchment lined cookie sheet. Bake cookies in a 350 degree preheated oven for 9-11 minutes or until the cookie tops start to crack and the sides are almost set.
  • Step 6 Remove the cookies from the oven and immediately press a Hershey’s hug into the center of each cookie. Let cookies sit for about 5 minutes to allow the Hershey’s hug to melt. Using the tip of a knife (of the back of a spoon) slowly run your utensil through the melted hug to swirl. Cool completely on wire baking racks.

We fell in love with the Canadian Cream at the Wayne Gretzky Winery & Distillery on our trip to Niagara-on-the-Lake. Right away I knew it would be amazing for this recipe. You can swap out for Bailey’s or your favorite Irish cream liquor. One bite and Irish Cream Fudge will become a new St. Patrick’s Day tradition!

Here’s all you’ll need: butter, sugar, evaporated milk, Irish cream liquor, instant coffee crystals, marshmallow fluff, white chocolate chips, and vanilla extract.

First combine the coffee crystals and cream liquor in a microwave safe container. Microwave on high for 30 seconds or until the coffee crystals dissolve when stirred. Set aside. I couldn’t resist trying a little taste at this point and I was blown away!! New rule: Only drink coffee with Canadian Cream.

After that bring to a boil. Continue to boil for 5 minutes stirring frequently. Take my advice on that big pot recommendation! Or if you’re like me you can white knuckle it and nervously repeat “Please don’t boil over! Please don’t boil over!” while you stir. I like to live on the edge apparently. Spoiler alert! It didn’t boil over but I was definitely pushing the limits on this one!! Big pot! Trust me.

Bring to a boil. Continue to boil for 5 minutes stirring frequently.

Finally remove from the heat. Stir in the white chocolate chips. The mixture will be thick! Continue to stir until the white chocolate chips are melted and the mixture is silky smooth! A whisk helped to speed this process along.

Lastly pour the mixture into a foil lined 8X8 pan so it’s nice and smooth. Allow the fudge to cool completely to room temperature. Cover and refrigerate for about an hour until it’s nice and firm. Once you’re sure that it’s completely solid all the way through, lift the foil out of the pan. Cut the fudge into 1 inch squares.

Pour the mixture into a foil lined 8X8 pan so it's nice and smooth. Allow the fudge to cool completely to room temperature.

Store in the refrigerator in an airtight container. This Irish Cream Fudge is pretty magical. Just watch it disappear!!!

  • Step 5 Pour the fudge mixture into the foil lined pan. Spread evenly until smooth.
  • Step 6 Allow the fudge to cool completely to room temperature. Cover and refrigerate for about an hour until firm. Once it’s completely solid, lift out of container, and cut into 1 inch squares. Stir in the refrigerator in an airtight container.
