This recipe is amazing for so many reasons. It starts off with a simple 3-ingredient base, takes super minimal prep work, and is ready after just a few hours of freezing. And since it’s no churn that means there’s no need for an ice cream maker. That’s right! You already have everything you need right in your very own kitchen. Sweet blackberry swirls, luscious cream cheese, and crunchy graham cracker pieces transform this easy recipe into an indulgent treat. No more chasing down the ice cream truck this summer, the ice cream man will be stopping by your house for dessert.

Here’s all you’ll need: blackberries, sugar, cream cheese, heavy cream, sweetened condensed milk, and graham crackers.

Add the blackberries and sugar to a blender or food processor and process until the fruit is pureed. This recipe is super versatile. You can easily swap out the blackberries for your favorite fruit. Strawberries, raspberries, blueberries or even peaches would make excellent additions to name a few.

Next strain the fruit puree over a fine mesh sieve to remove the seeds. If you don’t have a mesh sieve handy, cheesecloth makes a great strainer too. You can find it in most grocery stores. Set the blackberry puree aside for a little later.

Add the softened cream cheese to a large bowl or stand mixer. If you don’t have a stand mixer a hand mixer will work just the same. So no worries! It took me quite a few years until I made the splurge on a KitchenAid. If you do have a stand mixer, I recommend using the whisk attachment in this recipe.

Beat the cream cheese on medium-high speed until smooth. Pour in the heavy cream and whip at a medium-high speed until soft peaks form. Soft peaks will barely hold their shape and flop over immediately when the beaters are lifted. Reduce the speed to a lower setting (or turn the mixer off completely) and pour in the sweetened condensed milk. Sweetened condensed milk will keep Blackberry Cheesecake Ice Cream smooth, airy and really creamy.

Gradually increase the speed of the mixer until you’re on the highest setting and whip until the mixture is thick and holds stiff peaks. Stiff peaks will stand straight up when the beaters are lifted. They can take anywhere from 5-10 minutes to form. See how thick and creamy…Mmmmm!!!…This is gonna be good!

Gently fold in the crushed graham cracker cookies by hand. To make crushed graham crackers simply break them apart by hand or use a rolling pin or heavy kitchen object to smash into pieces. I’d steer clear of the food processor as it will pulverize the graham crackers a bit too much in this case.

Add a third of the ice cream mixture to an 8″ X 5″ loaf pan or a shallow container. Drop several spoonfuls of blackberry puree randomly over the top of the ice cream mixture. Drag a butter knife through to create distinct swirls of blackberry throughout the ice cream. Add another layer of ice cream and repeat twice. Our goal is to get the blackberries swirled somewhat evenly throughout the batch.

Cover Blackberry Cheesecake Ice Cream and freeze for at least 4 hours or overnight. Remove from the freezer and allow the ice cream to sit at room temperature for a few minutes before serving. This will make it easier to scoop! Store leftover ice cream in the freezer for up to 3 months We recommend covering tightly with plastic wrap to prevent ice crystals from forming.

No Churn Blackberry Cheesecake Ice Cream

  • 1/2 cup blackberries
  • 1 Tablespoon sugar
  • 1/2 cup (4 oz.) cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1 cup crushed graham crackers
Directions
  • Step 1 Add the blackberries and sugar to a blender or food processor and process until the fruit is pureed. Strain the fruit puree over a fine mesh sieve to remove the seeds. Set aside.
  • Step 2 Add the softened cream cheese to a large bowl or stand mixer. Beat the cream cheese on medium-high speed until smooth.
  • Step 3 Pour in the heavy cream and whip at a medium-high speed until soft peaks form.
  • Step 4 Reduce the speed to a lower setting (or turn the mixer off completely) and pour in the sweetened condensed milk. Gradually increase the speed of the mixer until you’re on the highest setting and whip until the mixture is thick and holds stiff peaks.
  • Step 5 Gently fold in the crushed graham cracker cookies by hand. Add a third of the ice cream mixture to an 8″ X 5″ loaf pan or a shallow container. Drop several spoonfuls of blackberry puree randomly over the top of the ice cream mixture. Drag a butter knife through to create distinct swirls of blackberry throughout the ice cream. Repeat twice.
  • Step 6 Cover and freeze for at least 4 hours or overnight. Remove from the freezer and allow the ice cream to sit at room temperature for a few minutes before serving. Store any leftovers in the freezer for up to 3 months. Enjoy!

Keep it traditional like we did, or make it your own by adding your favorite pizza toppings. Try adding black olives, fresh peppers, mushrooms, or even a little fresh basil from the garden. Yum!!! You’ll be the hit of your next party with Pizza Pasta Salad on the menu.

Here’s all you’ll need: bowtie pasta, cherry tomatoes, cheddar cheese cubes, mozzarella cheese cubes, sliced pepperoni, canola oil, Parmesan cheese, red wine vinegar, garlic powder, oregano, salt and pepper.

Did I mention this recipe comes together quickly and can be prepared ahead of time? Bonus! If you can boil water, cook pasta, and slice veggies and cheese, then you got this! Start by prepping the tomatoes, green onions, and cheese. Cut the tomatoes in half, slice the green onions and cube the cheeses.

Next cook the pasta according to package directions. We used bowties because I love their fun shape but of course you any similar sized pasta. Rotini (spiral pasta), Rigatoni, Rotelle (wagon wheels) or even Cavatappi would work great! Drain, rinse, and cool the pasta, then add it to a large mixing bowl. We’ll be adding A LOT of toppings so the bigger the bowl the better!!

Here come those toppings!! Add the pepperoni slices, green onions, tomatoes, cheeses and any extra pizza toppings of your choosing to the bowl. Yum, yum, yum!! I’m ready to dive right in.

Now let’s make that dressing! I love using a homemade dressing rather than bottled. This one’s a cinch to make and jam packed with amazing flavor. Combine the canola oil, Parmesan cheese, red wine vinegar, garlic powder, oregano, and salt and pepper in a small bowl. Mix it all up and you’ve got yourself an easy peasy delicious dressing.

Pour the dressing over pasta salad to cover and toss to coat. Make sure to get the toppings distributed nice and evenly. I want a little bit of everything on my plate! Cover and refrigerate for an hour or until ready to serve.

Pizza Pasta Salad like almost any pasta salad really soaks up that dressing. If you plan on making ahead of time, I’d add the dressing the morning of or a few hours before you’re ready to serve.

  • 2 teaspoons dried oregano

If you’ve never made Pizza Pinwheels then you’re truly missing out! This bitesize, crowd pleasing appetizer is totally irresistible, super easy to make and tastes just like pizza. Loads of pepperoni and mozzarella are wrapped up inside a tender, flaky crescent dough crust. These mini pizzas are fun to eat, extremely dippable, and 100% kid approved. And did you notice there’s only 5 ingredients? I mean c’mon!! Perfect for game day, after school snacking and just about everything in between. You’ll be making this one again and again!

Here’s all you’ll need: pepperoni, mozzarella cheese, oregano, an egg, and crescent rolls.

Let’s get rolling! First we need to dice up that pepperoni into itty bitty pieces. Short on time? Try pepperoni minis instead! As if this recipe couldn’t get an easier.

In a small bowl, combine the diced pepperoni, mozzarella cheese, oregano, and the egg yolk. Only the yolk. Make sure to save the egg white! We’ll be using it a little later.

Next pop the top on that crescent dough and try not to jump! I know, I know. It’s near impossible. Unroll the crescent roll dough and pinch the seams closed to form one big piece.

Then spread the cheese and pepperoni mixture over top to within 1/4″ of the edges. Because what’s a pizza without loads of pepperoni and cheese??? I love this recipe because it’s really versatile. Switching up the cheese and fillings can give it a fun twist. Diced ham and cheddar would be a perfect pair! The possibilities are really endless!! Mmm mmm.

Time to get rollin’! Starting with the shortest side, roll up the dough jelly-roll style. This is how we get that amazing spiral. Pinch the seam closed to seal. Place the roll on a cutting board and cut into 12 equal sized slices. I start by cutting the roll in half. Then cut both of those halves in half. Then cut each one of those pieces into thirds. This helps to keep all my slices nice and uniform.

Place the slices on a baking sheet lined with parchment paper. The parchment paper is so clutch here!! You know I love it but in this case it’s seriously a MUST! The melty cheesy goodness on the inside will easily stick to the pan and no one wants that. Oh and remember that egg white we set aside earlier? Well now’s the time to use it. Lightly beat the egg white and then brush it over the tops of the pizza pinwheels.

Bake in a 375 degree preheated oven for 12-15 minutes or until lightly golden. Serve warm with marinara sauce or Ranch if you’re crazy like that and watch them disappear. No seriously, you better grab one for yourself!

  • Step 2 Unroll the crescent roll dough and pinch the seams closed to form one big piece. Spread the cheese and pepperoni mixture over top to within 1/4″ of the edges.
  • Step 3 Starting with the shortest side, roll up the dough jelly-roll style. Pinch the seam closed to seal. Cut the roll into 12 equal sized slices.
  • Step 4 Place the slices on a baking sheet lined with parchment paper. Lightly beat the egg white and then brush it over the tops of the pizza pinwheels.
