I’m pretty sure S’mores are the official dessert of Summer. Well if you like S’mores then you’re gonna flip out over S’mores bars!! These deliciously decadent bars taste just like S’mores but without all the mess. Heck, you can even skip the bon fire which means you can make them all year round. No excuses! We start with a layer of graham cracker goodness, followed by loads of chocolatey chunks, topped with ooey, gooey marshmallow creme and more graham cracker crumbles. If you’re a sucker for sweets then you ought to know this dessert is seriously addictive!!! No, for real. S’mores Bars will leave you drooling and craving more. Don’t say I didn’t warn ya!
Here’s all you’ll need: butter, sugar, egg, vanilla extract, flour, graham crackers, baking powder, salt, milk chocolate candy bars, and marshmallow fluff.
S’mores Bars were an instant hit in my house, so let’s get started on this ASAP so you can enjoy them too! Add the butter and sugar to a large bowl and cream with a mixer until light and fluffy. You’ll want the butter to be a little bit soft so it’s easier to mix. You can leave it on the counter for a bit to soften, or if you’re like me you can “cheat” and nuke it in the microwave for about 15 seconds. A girl’s gotta do what a girl’s gotta do!
Next beat in the egg and vanilla extract. Just a teaspoon will do ya! Blend on a low speed until the egg is fully incorporated.
In a separate bowl, combine the flour, graham cracker crumbs, baking powder and salt. You can use a food processor to make the graham cracker crumbs or if you’re in a pinch, put them in a ziplock bag and crush away by hand. About 6 full size graham crackers should get you right around 3/4 cup of graham cracker crumbs.
Gradually add the dry ingredients into the wet mixture. Mix well. This delicious batter will serve as both graham cracker layers. So be sure to set aside 1/2 cup of the mixture (for our top layer).
Press the remaining graham cracker mixture into the bottom of a 9X9″ baking pan. You can grease with cooking spray, but I find that lining with parchment paper helps these sticky bars to pull right out of the pan. Press the chocolate bars into the crust, then spread the marshmallow creme over top. If you find that marshmallow creme is too sticky to work with, you can nuke it in the microwave to make it easier to spread.
And lastly, grab that reserved graham cracker mixture from earlier and crumble it over the top. Go ahead. Just sprinkle it right on there. You really can’t mess this part up! Bake in a 350 degree, preheated oven for 25-30 minutes or until the graham cracker topping is golden brown. Remove from the pan and cool on a wire rack then cut into bars.
Gimme gimme S’more! Gimme S’more, gimme gimme S’more! What’s your favorite part of S’mores, the graham crackers, the chocolate, the marshmallows, or all three? If you love S’mores Bars then you better put our Cookie and Cream Rice Krispies Treats on your to do list!

If Spinach Artichoke Dip is involved then you can count me in people! It’s pretty much one of my main weaknesses. I just can’t say no to this luscious, creamy, absolutely delicious dip. I’ve tried all the recipes, the restaurant knock offs, the crockpot versions, you name it. But this one, my friends, is by far my favorite! One taste and you’ll be hooked too. There’s no mayo involved so it tastes much lighter than most variations, which to me, really sets it apart from the rest. Loaded up with spinach, artichokes, and of course, LOTS of cheese, you won’t believe how quickly this dip becomes your new obsession. You might as well just go ahead and throw away all those other recipes right now. This is seriously THE BEST Spinach Artichoke Dip EVER!!!
Here’s all you’ll need: artichoke hearts, fresh spinach, garlic, onion, sour cream, cream cheese, milk, mozzarella cheese, Parmesan cheese, garlic salt, Italian seasoning, and pepper.
So not only does Spinach Artichoke Dip taste amazing but it’s also super duper easy to prepare. Chop the onions, spinach and artichokes. A lot of recipes that I’ve tried in the past use frozen spinach. Well after this one, I’m a firm believer that fresh is best! It gives this dish such a nice texture. For the artichokes however, I always opt for the canned version. This time saver is just invaluable to me considering all those minutes I’ll inevitably spend googling how to cut fresh artichokes and watching you tube videos. Combine the onions, garlic, spinach, and artichokes in a medium sized bowl.
Oh yeah, did I mention that chopping the vegetables is the hardest part of this recipe? I can feel that sigh of relief. The heavy lifting’s over! Stir in the sour cream and softened cream cheese. You can lighten this recipe up even more by selecting fat free or low fat versions. But in my mind that just gives me permission to pile on that cheesy topping at the end of this recipe! So your call. Choose your battles wisely.
A few more quick additions and we’re ready for the oven! Mix in the milk, 1 cup of mozzarella cheese, grated Parmesan, garlic salt, Italian seasoning, and pepper. Again with the milk, skim, 2%, whole, I’ll leave that up to you and your waistline. But you really can’t make a bad decision here but for the love of God save the Almond and Coconut milk for another time! Mix up all the ingredients until the Spinach Artichoke Dip is nice and creamy. Mmmm….do you see that?!? Chunks of yumminess in every.single.bite!
And now for my favorite part…SAY CHEESE!!!! The cheesy topping on this dip is a total game changer! I don’t know why it never occurred to me to do this myself but it’s literally life changing. You’ll never go back to the plain old naked version again. Place the Spinach Artichoke Dip in a pie plate or shallow baking dish. Then sprinkle that remaining cup of mozzarella over the top. I mean cause who wants to put a measly 1 cup of mozzarella back in the fridge anyways?!? That’s just sad. And now we’re ready for the oven! Bake uncovered, in a 400 degree preheated oven for 30 minutes or until the cheese completely melted.
Serve warm with your favorite dippers. We love tortilla chips, pita triangles, or even toasted baguette! That melty cheese with those crispy golden edges got me drooling a little. Spinach Artichoke Dip is great for sharing….otherwise you’ll be eating the whole pan yourself!!! Which isn’t a bad thing either! And don’t forget to try our Cheesy Pizza Dip too!!

Have you ever gone to the grocery store and just couldn’t avoid buying something that wasn’t on your list??? Raise your hand! We’ve all been there! That’s what happened with these strawberries. I just couldn’t pass them up! So then I started to brainstorm what to make with them….stuffed strawberries, strawberry muffins, strawberry shortcake…..and then it came to me……Berry Delicious Belgian Waffles!!! Ding, ding, ding!! We have a winner!! Any excuse to use my waffle maker is a good one in my book. And paired with some blueberries they made quite the festive Memorial Day breakfast for me and my hubby.
Plus waffles remind me of one of my favorite vacations that we took back in 2015 to Big Sur, CA. We stayed at Treebones Resort in the Human Nest. IF YOU EVER GET THE CHANCE TO DO THIS, YOU MUST!!! The Human Nest is exactly what you are picturing right now….a giant nest for humans to sleep in. Such an amazing experience, breathtaking views, and an unforgettable breakfast. That’s right…you guessed it! Waffles!!! Except these waffles came with the most stunning view overlooking the Pacific Ocean. AND did I mention they were complimentary?!? Even better right!!
Look at that view!! I find myself constantly wishing I was there! But my view isn’t so bad here either….Look at those sweet faces!!! And they love strawberries too!
In a small bowl, combine the flour, sugar, and baking powder.
Add the milk, butter, and vanilla to the bowl with the egg yolks and mix well with whisk.
Stir in the dry ingredients until just combined. Don’t worry if it still looks a little lumpy. Totally fine!
Here’s where we’ll use those egg whites from earlier. Place the egg whites in a bowl and beat with a hand mixer until stiff peaks form. I started on a medium speed. Continue to increase the speed every 10-15 seconds until you’re all the way up to the max! At about 2 minutes my stiff white peaks began to form.
See! Look how foamy! This is where the waffles get that extra fluffiness from!
Using a spoon or a spatula, gently fold the egg whites into your batter.
Keep folding until they’re all mixed in! I like to make sure to scrape the bottom of the bowl and really get them mixed in there good.
Plug in your waffle iron. I love this one Cuisinart WAF-F20 Double Belgian Waffle Maker, Stainless Steel. Spray lightly with cooking spray before it starts to heat up. You’ll only have to do this step one time. Once the iron is hot you will not have to continue to spray between waffles.
Let’s get those toppings ready! Now is a good time to slice up some of those strawberries while the waffle iron is heating up! Don’t they look delicious! I could eat them without the waffles.
When your waffle iron is ready, scoop in a small amount of batter. This part will take a little bit of trial and error to figure out just exactly how much batter is needed. My waffle iron is by Cuisinart and takes about half a cup of batter per waffle. Quickly spread the batter with a spatula. Don’t worry about getting every crevice! The batter will naturally spread out on its own as well.
Close it up and wait for the beep, or the buzzer, or the light to go on! OMG! Golden delicious goodness!!!
Gently lift the waffle out of the iron and onto your plate……and into your mouth!!
Add the sliced strawberries and blueberries (and maybe a little butter or syrup or whipped cream!!) and Voila! You’re done! If you need me, I’ll be right here daydreaming about Big Sur while stuffing my face with Belgian waffles! Nom nom nom!!
