Everyone and I do mean EVERYONE loves a good cannoli. But not everyone enjoys the work! Well this fun to eat, Easy Ice Cream Cone Cannoli recipe is a game changer people!!! It’s all the deliciousness of a good old fashioned cannoli but without any of the fuss. I know!! I can’t believe it either!! We’re trading cannoli shells for sugar cones to make this new summer delight. This super cute substitute allows the simple, creamy, cannoli filling to be the star of the show. Adults and kids alike will love this one! It’s SO good and ridiculously easy to whip up. No excuses!! You’ve gotta make this one ASAP!!
Here’s all you’ll need: ricotta cheese, confectioners sugar, mini chocolate chips, vanilla extract, and sugar cones.
The key to this entire recipe lies in the very first step. You’ve gotta drain the ricotta!! Like really, really good!! Place the ricotta in a fine mesh strainer or wrap it in cheesecloth. Place a bowl underneath and allow it to drain for 12 hours or preferably overnight. I know what you’re thinking….overnight??? But Lisa you said this was gonna be easy!! Well it is!! You can totally go on with your business and forget about it. Getting out that excess moisture will ensure a thick and creamy cannoli filling and ice cream cones that aren’t soggy. Totally worth it.
Drain off the excess liquid from the ricotta cheese. In a large bowl, combine the ricotta, confectioners sugar, and vanilla extract. Mix well to combine. You can use a hand mixer on the lowest speed or just a good ole fashioned spoon and some elbow grease. I bet you can guess which route I took! Whatever gets those Easy Ice Cream Cone Cannoli into my belly faster!
Next stir in the mini chocolate chips. You’re so cute mini chocolate chips!! I could just eat you right up. In due times my friends!! Baaahhaahaaaa!!!! Refrigerate the filling until ready to use.
Fill a microwave safe dish with 1/2 to 3/4 cup of mini chocolate chips. Microwave for 30 seconds, remove from the microwave and stir. Repeat the process (in 30 second intervals) until the chocolate is creamy and melted.
Dip the edge of the sugar cone into the chocolate and submerge. Swirl it around a time or two and then tap off the excess chocolate.
Next roll the rim of the sugar cone into a bowl filled with mini chocolate chips. The melted chocolate will collect the candies and stick them to the cone. Place the chocolate covered cone on a sheet of parchment paper and allow the chocolate to harden. It should only take about 10-15 minutes. But if you’re impatient like me, you can toss them on a plate and stick them in the fridge for a few minutes to speed up this process. You could also swap the chocolate chips for pistachios, sprinkles, or whatever fun topping you’d like! Go nuts and make these Easy Ice Cream Cone Cannoli your own!
Once the chocolate has set up, it’s time to fill these babies!! Remove the filling from the refrigerator and add it to a ziplock baggie. Seal the bag and then cut a fairly large opening in the corner. It needs to be big enough to allow the filling and those mini chocolate chips to sneak out.
Pipe the filling into the ice cream cones and serve immediately. You can totally make the filling ahead of time but the cones will get soggy if you fill them too far in advance. Don’t worry! It only takes a sec! Besides once these lil guys are filled you won’t be able to resist a bite! Pair with our One Pan Skillet Lasagna and you’ve got yourself an easy summer meal.
Easy Ice Cream Cone Cannoli
- 8 sugar cones

- Step 5 Dip the edge of the sugar cone into the chocolate. Shake off any excess chocolate. Roll the cone through a shallow bowl filled with mini chocolate chips. Place the cones on parchment or wax paper and allow the chocolate to harden.
- Step 6 Remove the filling from the refrigerator and add it to a ziplock baggie. Seal the bag and cut a fairly large opening in the corner. Once the chocolate has set, pipe the cannoli filling into the cones. Serve immediately and enjoy!

Looking for a boredom buster right about now that doesn’t involve snow or going outside??? Well I’ve got the cutest lil food craft for you….and your kids…don’t forget about them! Polar Bear Marshmallows are sure to cure even the meanest case of the “I’m Bored” blues. And get this…they’re no bake too, so really all you have to do is supervise. WIN!!! Plus the end result is your beautiful family enjoying a round of hot chocolate together. Awww!!! I’m getting all warm and fuzzy just thinking about it. I recently test drove this edible, hands on craft with my niece, Ellie and my nephew, Nathan. They were an absolute hit right from the start. Nathan was quick to put his own spin on it and created a few three eyed monster polar bears. While Ellie, lover of all things cute and adorable, stuck to the original design. Wherever your creativity may take you, one thing’s for sure, hot chocolate has never been SO sweet!!! I suggest making as many as you can and storing in a ziplock bag, so you can enjoy polar bears swims all winter long.
Here’s all you’ll need: jumbo size marshmallows, regular size marshmallows, mini marshmallows, white candy melts, M&Ms, and candy eyes (I grabbed these from Hobby Lobby, but you can find them at Michaels too, or just about any craft store).
Place about 1/2 a cup of white candy melts into a ziplock bag and seal. Microwave for 30 seconds. Squish the candy melts around in the bag to mix them up and then pop em back in the microwave for another 30 seconds. Repeat as many times as necessary (usually takes me about 3 times in my microwave) until the chocolate is completely melted. This will act as our “glue” to stick everything together. Snip a small hole in the corner of the bag. Reheat as needed.
With a knife or kitchen shears, cut a regular size marshmallow into thirds. Eat…I mean discard the middle. I helped the kids with this part and let them handle the rest…the cutting, not the eating. Squeeze or fluff it up to keep it’s round shape. This will serve as the polar bear’s muzzle.
Put the marshmallow so that it’s sticky side up. Squeeze a small amount of our candy melt “glue” onto the middle of the sticky side. Just a little dab will do ya!
Place “glue” side down onto the base of a jumbo marshmallow to form the polar bear head and muzzle. Push down firmly to hold it in place.
Next dab a small amount of candy melt onto the “m” logo of the M&M. This will be our nose! You can use any color that you like. I was partial to the blue and brown noses. Nathan’s a fan of the greens (his favorite color) and if M&M’s came in pink, I know Ellie would be all over it!
Add it to the muzzle and press down firmly to hold it in place. Can you see these Polar Bear Marshmallows starting to take shape?
Next add a dab of candy melt to the back of the candy eyes and put them in place directly above the muzzle. I can see our bear coming to life already!
Lastly add a dab of candy melts to the mini marshmallows and stick them to the side of the bear’s head to make ears. I found it helpful to hold the ears in place for about 15-30 seconds to help them stick. This helps the candy melts to harden and will help the ears in place.
And just like that! You’re done!! Isn’t he just the about the cutest thing you’ve ever seen???
Time for a little polar bear swim! Place Polar Bear Marshmallows atop your hot cocoa and finish with a mountain of whipped cream! I hate it when I have to decide between whipped cream and marshmallows, but lucky for me, this drink has LOADS of both!! If you think this is cuteness overload, just wait until you see our Snowman Pancakes!!!

This recipe is EVERYTHING!!! It’s 5 ingredients, it’s no bake, it’s simple, it’s easy to whip up, it can be made ahead of time, it’s impressive, it’s a crowd pleasing favorite, and it’s so versatile! You can bring it on a summer picnic in the park, serve at your fourth of july party, or even just pack it in your lunchbox for a healthy snack on the go! Caprese salads are so delicious to begin with…the ripeness and juiciness of the tomatoes, the texture and flavor of the mozzarella, and the way the fresh basil perfectly blends it all together…Mmm!! I love them. I really could eat these any place, any time. Like seriously!! Turning them into kebabs just makes it even more fun to eat! So I’m going to dedicate this one to all of the kitchen newbies out there. I promise, you cannot mess this one up. Next time you are asked to bring a dish to a party, don’t run to the store and buy the pre made whatever you planned on bringing. Make this one instead! It’s a surefire way to really wow the crowd!! Oh and…just be sure to make enough….these will go fast!!
Here’s all you’ll need: Cherry or grape tomatoes, marinated mozzarella, basil, olive oil, balsamic vinegar, and shish kebab skewers. (The tomatoes and mozzarella pictured are enough to make a double batch. The recipe is for a single batch. )
Rinse tomatoes and basil. Is there anything that’s better than fresh tomatoes in the summer?!? I mean besides THIS recipe!
Thread a tomato onto the skewer. Then add the basil, and the mozzarella. Try not to eat all the cheese as you’re assembling! (talking to myself obviously!!) Some of the basil leaves were gigantic so I cut them in half, but it’s all personal preference.
Add olive oil and balsamic vinegar to a small container with a lid.
Drizzle over kebabs and serve! Really that’s it! If I don’t plan on serving them right away, I toss them in the refrigerator and add the dressing right before serving. Really wishing I hadn’t eaten the rest of the cheese right now so I could make some more!!!
