Between starting an exciting new job, a revolving door of house guests that we hadn’t seen in foreva, and a few really spectacular parties, I pretty much blinked and July was gone. On the bright side, we’ve already had A LOT of fun this year!! But a hectic schedule leaves ya with little time to cook. Thank goodness for this next recipe! Key Lime Mousse Tarts are a quick and easy summer dessert that can be thrown together last second. In fact I even encourage it! Let me just start by telling you this….they’re no bake! Uh huh!! Think super easy, no fuss, best dessert of summer kind of thing. A spinoff on the classic key lime pie, these dreamy little delights are sure to wow your tastebuds. They’re best served fresh, which is all the more reason to grab a second helping…or third….or fourth!

First things first we’re going to need to thaw those phyllo shells. Don’t worry! They only take like 15 minutes to thaw. So take ’em out of the freezer, get to work on this recipe, and they’ll be ready to go by the time we need them. Next combine the cream cheese, sweetened condensed milk and lime juice in a large bowl.

Don’t panic if you can’t get your hands on key limes. Regular old limes work just as well. We heated the limes in the microwave for about 15-30 seconds before juicing. Heating the limes is a great way to squeak out a little more juice. And by juicing I mean I just cut them in half and squeezed them until all the juice came out. But if you have access to a juicer then by all means have at it! You fancy huh?!?

Blend the mixture with a hand mixer at medium speed until smooth and creamy (about 3-5 minutes). It doesn’t have to be perfectly smooth but we want to make sure that no large cream cheese chunks are hanging out in there.

Next in a separate bowl, beat the heavy whipping cream. Start on low, and keep increasing the speed every 30 seconds or so until you’re maxed out at the top speed. Keep mixing on high until stiff peaks begin to form. Voila! Homemade whipped cream! I find that it helps to speed along the process if you move the beaters in a back and forth motion in the bowl.

Now gently fold the whipped cream into the cream cheese mixture. Continue to mix until the two mixtures become one aka a light and fluffy mousse!

Add the mousse to a ziplock baggie and seal. Snip a large opening in the corner to create a DIY piping bag. Pipe a generous amount into each of the phyllo shells. Mound that stuff up!! This is a situation where you WILL want to lick the bowl if there’s any leftovers. Just warning you! If you’re not planning to serve these right away then you should refrigerate the mousse until ready to use. You want to pipe it into the shells just before serving otherwise the shells will get soggy.

Key Lime Mousse Tarts

  • 4 ounces cream cheese, softened
  • 2/3 cup sweetened condensed milk
  • 1/4 cup Key lime juice (about 3 limes)
  • 1/2 cup heavy whipping cream, whipped
  • 2 packages (1.9 ounces each) frozen miniature phyllo tart shells
  • Fresh raspberries
  • lime wedges
Directions
  • Step 1 Remove phyllo shells from the freezer and thaw.
  • Step 2 Combine the cream cheese, sweetened condensed milk and lime juice in a large bowl. Blend the mixture with a hand mixer at medium speed until smooth and creamy (about 3-5 minutes).
  • Step 3 In a separate bowl, mix heavy cream with a hand mixer on the lowest setting. Gradually increase the speed in 30 second intervals until on the highest setting. Beat on high for several minutes, until stiff peaks begin to form.
  • Step 4 Gently fold the whipped cream into the cream cheese mixture. Continue to mix until well combined.
  • Step 5 Add the mousse to a ziplock baggie and seal. Snip a large opening in the corner to create a DIY piping bag. Pipe a generous amount into each of the phyllo shells.
  • Step 6 Garnish each tart with a fresh raspberry and lime slice! Enjoy!!

Soooo….you know I love me a good no bake last minute recipe! With the Super Bowl less than a week away, I wanted to bring you this super easy, super delicious party snack. Just because a recipe comes together quickly doesn’t mean it can’t be a show stopper! Our Chocolate Chip Cheesecake ball is a fun spin on the traditional cheese ball and is sure to be the game day MVP. You can even make it ahead of time or even the day before, refrigerate, and pull it out in time for kickoff. More sweet than savory, it’s dessert like flavor is a hit with kids and adults alike. Equal parts cheesecake and chocolate chip cookie dough, this yummy snack will have your party goers huddled around the food table! Ready, set, hike!!!

Here’s all you’ll need: cream cheese, butter, vanilla, confectioners sugar, brown sugar, mini chocolate chips, pecans, and graham crackers for dipping.

In a large bowl, mix the cream cheese, softened butter, and vanilla until smooth. I totally cheated and nuked the cream cheese for 30 seconds in the microwave, then added the butter and ran it for another 15 seconds. Instantly softened cream cheese and butter for the win!

Next add the brown sugar and confectioners sugar and mix until well blended. The mixture should be nice and creamy and tastes just like cheesecake at this point! YUM!!!!

Stir in the mini chocolate chips. Mix until evenly distributed. Cover the mixture and refrigerate for two hours or until firm enough to shape. This recipe is literally just a bunch of refrigeration time with about 5 minutes of actual work. I won’t tell if you don’t! Super simple recipes are my favorite!!

Place the mixture on a large sheet of plastic wrap. Cover completely with the plastic wrap and shape into a ball. Place the ball into a bowl and refrigerate for one hour. The bowl helps to keep its round shape. And don’t forget, you can make this the morning of, or the day before and just keep it refrigerated until ready to serve. That is….if you can keep your hands out of it until then!

Unwrap the cheesecake ball and roll the ball into the chopped pecans before serving. Nom nom nom nom!! You’re gonna wanna double dip! You’ve been warned!

I’m going to let you in on a little secret…..my hubby is an eggnog freak!!! No he doesn’t do weird things with eggnog……but he IS pretty eggnog obsessed!! He absolutely loves it and cannot get enough. Unfortunately for him, it’s only available for a short time around the holidays, so I try to sneak in a few eggnog inspired treats so he can get his fill. I found this eggnog fudge recipe a few years back, included it in some homemade Christmas gift baskets and it was an instant hit with our family!! This year I’ve added it to my Christmas cookie trays because after putting in a 12 hour cookie baking marathon over the weekend, I am loving me a good no bake recipe right about now!!! I know you can relate. This fudge is super simple, only 6 ingredients, and perfect for a last minute Christmas gift…..just make sure you keep a few squares for yourself!! You can thank me later.

Here’s all you’ll need: eggnog, sugar, white chocolate chips, butter, marshmallow fluff, and a little nutmeg.

Bring the mixture to a boil. Continue to stir occasionally as it’s coming to a boil. Once it starts to boil, stir constantly (and continue to do so) and heat for 10 minutes. Stir with caution. No splashing! No reckless abandon!  This mixture is very hot and sticky. If you are a klutz in the kitchen just shut it down right now!

Remove the mixture from the heat. Stir in the white chocolate chips, butter and marshmallow fluff. Getting the fluff out of the jar is probably the hardest or at least the stickiest part of this recipe! Does anyone know an easy way to do this??? I’m all ears!!! Stir until the white chocolate chips are melted and the butter and fluff are completely incorporated. The mixture should be nice and smooth!! Also you can skip your arm workout today after all that stirring.

And last but not least, sprinkle with a little bit of nutmeg. This is my favorite part of the whole recipe!! This little nutmeg dusting is clutch. You want to do this right away before the eggnog fudge has a chance to start setting up. Allow the fudge to cool completely to room temperature. Cover and refrigerate for about an hour until it’s nice and firm. Once you’re sure that it’s completely solid all the way through, lift the foil out of the pan. Cut the fudge into 1 inch squares.

Store in the refrigerator in an airtight container. Or if you’re up North like us Buffalo folks, you can store in the mudroom or on the back porch! (yep! That’s a thing!)   • 1 cup butter
  • 1 (7 ounce) container marshmallow cream
  • nutmeg for dusting
Directions
  • Step 1 Line a 13X9″ pan with aluminum foil. Spray with cooking spray.
  • Step 2 Combine sugar and eggnog in a Dutch oven. Heat over medium heat stirring occasionally.
  • Step 3 Bring the mixture to a boil. Continue to stir for 10 minutes as it boils.
  • Step 4 Remove the mixture from the heat. Stir in the white chocolate chips, butter and marshmallow fluff. Stir until the chips are melted and everything is fully incorporated.
  • Step 5 Pour the fudge mixture into the foil lined pan. Spread evenly until smooth. Sprinkle with nutmeg.
  • Step 6 Allow the fudge to cool completely to room temperature. Cover and refrigerate for about an hour until firm. Once it’s completely solid, lift out of container, and cut into 1 inch squares. Stir in the refrigerator in an airtight container.
