Meatball Sub Casserole

Meatball Sub Casserole

Looking for the ultimate party food to feed a hungry crowd? Or maybe you just need a new and exciting weeknight family dinner recipe? Well Meatball Sub Casserole is kinda both! This easy oven meal is savory and SO delicious. If you’re a meatball sub lover, you’re gonna be hooked on this one. I promise. All the best parts of meatball subs join forces to create this one of a kind, tasty dinner. The best part? You can even make the meatballs ahead of time to cut down on the prep work. Get ready to be the hero of dinner tonight!

Here’s all you’ll need: green onions, bread crumbs, Parmesan cheese, ground beef, French bread, cream cheese, mayonnaise, Italian seasoning, pepper, mozzarella, spaghetti sauce, garlic, and parsley.

Meatball Sub Casserole ingredients list

Let’s get started on those mini meatballs! In a medium sized bowl, combine the green onions, bread crumbs and Parmesan cheese. Green onions lend a nice, mild flavor to these tasty lil meatballs.

Green onions, bread crumbs and Parmesan cheese mixed together in a medium sized bowl.

Add the beef and mix well. Go ahead and roll up those sleeves. Everybody knows the best tool for mixing meatballs is your two. bare. hands!

Ground beef is added to the green onions, bread crumbs and Parmesan cheese and then mixed well.

Next shape the meat mixture into 1-inch balls. A cookie scoop with help to keep the batch nice and uniform, but you’re more than welcome to freestyle it. Isn’t it crazy how even meatballs are cuter when they’re mini sized!?! Line a baking sheet with aluminum foil. Lightly spray with cooking spray and place the meatballs on top. Bake in a 400 degree preheated oven for 8-10 minutes.

Looking to save a little time? Swap out for frozen pre cooked meatballs. Or you can even make our mini version ahead of time and refrigerate or freeze until you’re ready to assemble the Meatball Sub Casserole.

!-inch mini meatballs placed on a baking tray lined with aluminum foil.

While the meatballs are baking, we can get rolling on the rest of this casserole. Chop the French bread into 1-inch cubes. Place them in the bottom of a 13X9″ baking dish. Day old French Bread works best for Meatball Sub Casserole. It’ll keep the casserole from getting too soggy.

1-inch French bread cubes placed on the bottom of a 13X9" casserole dish.

Mix together the softened cream cheese, mayo, Italian seasoning and pepper in a small bowl. We don’t want any cream cheese clumps. The mixture should be smooth and creamy.

Cream cheese, mayo, Italian seasoning, and pepper mixed together in a small bowl.

Spread the cream cheese mixture over top of the cubed bread. Then top with 1/2 a cup of mozzarella because who doesn’t love a hidden layer of cheese??? Seriously!!!

The cream cheese mixture is spread over the bread cubes, then topped with mozzarella cheese.

In a large bowl, add the spaghetti sauce (Chef’s is our local favorite!), water and garlic. Mix well to combine then add in the meatballs. Pour the sauce mixture over the bread. Yep! All of it. Try to spread out those meatballs if you can.

Meatballs and sauce spread over top of the bread cubes in a 13X9" dish.

And of course Meatball Sub Casserole wouldn’t be complete without a top layer of cheese!! Sprinkle with the remaining mozzarella to cover the casserole. Bake uncovered, in a 350 degree preheated oven for 25-30 minutes. The cheese should be melted and the casserole heated through.

Mozzarella layered on top of the meatballs in a 13X9" casserole dish.

Garnish with parsley and let’s dig in! Absolutely, positively, 100% delicious!!! Look at all that cheesy goodness!!  I feel a food coma coming on! If you’re digging this recipe, you’ll seriously love our Pizza Zucchini Casserole too.

Speedy Kielbasa Dip

Speedy Kielbasa Dip

Typically March Madness means I’m outraged because I’m SO. Over. This. Snow!!! But this year’s a little different. We’re all about basketball right now here in Buffalo. Our hometown team, the University at Buffalo, pulled off a huge upset! If you know Buffalo sports, you know that we love ourselves a good underdog to root for. The 13th-seeded UB Bulls came up with a huge win against the 4th-seeded Arizona Cardinals in the NCAA tournament on Thursday night. The 89-68 point victory marks the very first NCAA tournament win in the school’s history!! Go Bulls!!! Talk about a bracket buster!! #sorrynotsorry We’ll be tuning in tonight to watch the Bulls face off against the Kentucky Wildcats. But what’s a basketball game without the party food?!? Our Speedy Kielbasa Dip is the perfect party snack! It’s great for game day or really any day for that matter. This thick and creamy dip is a family favorite. And it’s my favorite too because it’s so quick and easy to make! How easy you ask??? Well…let’s put it this way…you won’t even have to turn your oven on! It’s 100% completely microwavable!! That’s why Speedy Kielbasa Dip is my go to recipe when I’m in a pinch and need to whip up party snacks in a hurry. You’ll be so happy to have this one in your recipe arsenal.

Here’s all you’ll need: cream cheese, sour cream, milk, mayonnaise, Worcestershire sauce, fully cooked kielbasa sausage, green onions, Parmesan cheese, and Tostitos or crackers for dipping.

Speedy Kielbasa Dip

Start with a microwave safe bowl. Heat the cream cheese uncovered for 1 minute. Stir it up. Boom! You just handled step one like a boss!

Heat cream cheese in a microwave safe bowl for 1 minute.

Next mix in the sour cream, milk, mayo, and Worcestershire sauce. Stir to combine. I know it’s hard to believe but we’re like halfway done with this recipe. A few more steps and it’s going to be AMAZING!!!

Mix in the sour cream, milk, mayo, and Worcestershire sauce.

Slice up the green onions. And dice up the Kielbasa while you’re at it too! If you really want to be on top of your game, you can have this stuff prepped ahead of time. A lot of times I prep the ingredients and take them with me to the party and then make the dip right there on the spot! After the prep work it literally takes less than 5 minutes in the microwave. Speedy Kielbasa Dip for the win!

Slice up the green onions. Then dice up the Kielbasa.

Now toss in the kielbasa, 1/4 cup of green onions, and Parmesan cheese. Stir to combine. Microwave for 1 and a half to 2 minutes. Stir. Then microwave for another 1 and a half to 2 minutes or until heated through.

Toss in the kielbasa, 1/4 cup of green onions, and Parmesan cheese. Stir to combine. Microwave for 3-4 minutes, stirring once.

Top with the remaining 1/4 cup of green onions to pretty it up a bit. Serve with chips or crackers for dipping. Really though, can you believe how easy that was?!? She shoots…she scores!! SWISH!!

Cheesy Pizza Dip

Cheesy Pizza Dip

It’s no secret that I love ALL things pizza!! I’ll take it in any way, shape or form….JUST GIMME ALL THE PIZZA!!!! No really. All that gooey, cheesy goodness gives me heart eyes. And our Cheesy Pizza Dip is no exception! It’s the perfect party app to serve on game day and a must make for your Super Bowl party. Heck! This super easy dip is the best way to get ANY party started! Did I mention it can be prepped ahead of time too? Toss it in the oven when your guests arrive and it’s ready in no time. Don’t be surprised when it disappears before kickoff. For real….you better go try some before it’s gone!

Here’s all you’ll need: cream cheese, Italian seasoning, garlic powder, shredded mozzarella, shredded cheddar, pizza sauce, chopped green pepper, chopped red pepper, and tortilla chips for serving.

Cheesy Pizza Dip ingredients list

In a small bowl combine the softened cream cheese, Italian seasoning, and garlic powder. Mix with a hand mixer on medium speed until smooth and creamy. I’m so not one of those people that has my cream cheese softened ahead of time. I just can’t get my act together like that! 30 seconds in the microwave will do the trick!

Softened cream cheese, Italian seasoning, and garlic powder mixed with a hand mixer in a small bowl.

Grease a pie plate with cooking spray. Spread the cream cheese mixture evenly into the bottom of the pie plate. I know what you’re thinking…pizza with no crust?!? But trust me!! Cheesy Pizza Dip is delicious even sans crust! You won’t even miss it.

Cream cheese mixture spread evenly in a pie plate.

Combine the cheeses. Mix em up really good. Now sprinkle half of the cheese mixture on top of the cream cheese. I’m pretty sure I couldn’t live without cheese! The loves in my life are like Hubby…Puppies….Cheese!!! And not necessarily in that order.

Shredded mozzarella and cheddar cheese are sprinkled over the cream cheese mixture to cover completely.

Spoon pizza sauce over top of the cheese. Spread evenly to cover.

Pizza sauce being spooned over the cheese.

Then top with green and red peppers. Or skip it for all you picky eaters out there! It’ll still be pretty yummy even without them. I’ve even made this with peppers only on half to accommodate different tastes. But I’m all for both kinds. Load it up!

Chopped green and red peppers are placed on top of the pizza sauce.

Sprinkle with the remaining cheese to cover. Cause you can never have enough cheese!!!

More shredded mozzarella and cheddar are added to cover the peppers and sauce.Bake Cheesy Pizza Dip uncovered in a 350 degree preheated oven for 20 minutes or until the cheese is melted. Cool for 5 minutes before serving. Tostitos make the best dippers! You know the scoop kind so you can get a nice heaping spoonful in your chip. This also goes well with breadsticks or toasted baguette rounds. Bonus points for the best cheese pull!! In need of some more great party apps?
